easy pickled eggs
eggs . 1 onion sliced into rings
1 sliced red or green pepper or both
salt
vinegar
.pickling spice
. sugar
cook 12 - 16 eggs to hard boiled stage, peel , place in a large sterilized jar( I just use a big pickle jar) as follow. place a few slices peppers and onion rings on bottom then layer eggs and vegs till jar is full
pour the following brine over. let jar cool and cover with lid store in fridge for 3 day then eat, keeps 3 months

brine>> 2 cups water
2 cups vinegar.
3 tablesoons pickling spice
2 tablespoons sugar
1 teaspoon salt.
bring to boil. pour over eggs..

I use 2 dozen eggs.boiled water with some salt in the water helps to remove the egg shells. Two cups of vinegar, Two cups of beet juice with red beets in with the eggs if you like red beets, 24 cloves (whole), 1 tablespoon mustard seed, and about 2 cups of sugar, all put together in a pickle jar. That's my moms recipe that i use.

Hard-boil your eggs, at least 5 minutes.
Place in cool water before removing the shells.
Place eggs in a sterilized preserving jar.
Pour in a mixture of white vinegar & boiled water.
You can also add pickling spices if desired.
Seal jars & store in frig or cool cellar for days.
