Green leafy vegetables include all types of lettuces, (Bibb, Boston, Butterhead, Cos, Crisphead, Romaine, etc) not just the iceberg which you commonly see in salads. There are also spinach, collard greens, turnip greens, beet greens, dandelion greens, mustard greens, Swiss chard, fiddleheads, field cress, water cress, cabbage, brussels sprouts, broccoli, celery, Belgium endive, and escarole. I am sure there are others I have overlooked as well. Some of these are regional favorites and others can be found in any supermarket. There are many ways to prepare these greens; some can be eaten in salads, while other require cooking.

I'm not sure of the name, but the bagged Spring Mix salad by Dole is full of leafy, dark greens, that are very good for you.

Spinach, mustard, lettuce, turnip greens, collard greens, dandelion greens, parsley and cabbage. There are many more but I just can't think of them now. Peace and God Bless.

Watercress - one of my favorite!!!

Hey Breezer! How are you!?
Does anyone know where I can find watercress in Italy. I've been in and out of the country for years, have told my Italian friends about it (those who haven't been to the UK) but have not been able to actually show them what it is.

Spinach and bok choy are my two favorites.... baby bok choy can go in so many dishes or be eaten by itself!
