I thought I saw a 350z with back seats, but everyone says it's a two seater. Did the model change from certain year? Does anyone know?

There are no 350z's made with rear seats standard.
Behind the front seats in the touring hard-top is a large structure housing a subwoofer behind the driver, and a glovebox behind the passenger.
Hope this helps! I would reccommend a RX8 if you're looking for a sporty car that will fit 4 people comfortably. alternatively the Infinity G35 (aka the V35 Skyline)has a large back seat and is essentially the same drivetrain as the 350z

Infinity G has small rear seats the 350Z has compartments behind theseats.

No it was always a 2 seater. Mabye you saw a 2008 Nissan Altima Coupe:
