Red generally just means riper, not hotter. Think about the difference between a green bell pepper and a red bell pepper -- the flavor of the red may be sweeter and have some other elements, while the green is more of a straight 'vegetable' taste.

Works the same way with hot peppers; red ones have a more developed, complex flavor, but -- especially considering that it ripened off the plant -- it's likely to be about the same in heat as if you'd used it when you got in home.

Happy birthday!

It should be about the same - keeping in mind jalapeños differ in heat for a variety of reasons.

Here's a twist on the recipe that is very good.

Jalapeño Chicken Wraps

Ingredients
1 lb boneless skinless chicken breasts
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp pepper
2 tsp seasoned salt
1 tsp paprika
1 small onion, cut into strips
15 jalapeño peppers, halved and seeded
1 lb sliced bacon, halved width-wise
Blue cheese or ranch salad dressing

Directions
Cut chicken into 2 x 1 1/2-inch strips.
In a large resealable plastic bag, combine the garlic powder, onion powder, pepper, seasoned salt and paprika; add chicken and shake to coat.
Place a chicken and onion strip in each jalapeño half. Wrap each with a piece of bacon and secure with toothpicks.
Grill, uncovered, over indirect medium heat for 18 to 20 minutes or until chicken juices run clear and bacon is crisp, turning once. Serve with blue cheese or ranch dressing.
Makes: 2½ dozen

No..they just ripened a bit more. Take the seeds out or else you are going to be breathing fire along with your bacon and cream cheese. =o))
