Very little time spent in preparation, perspiration or frustration trying to decide what to cook.

i've tried many recipes, and this is my fav. i use cremini mushrooms instead of button, but it's up to you........

Beef Stroganoff

Butter and/or olive oil for frying
8 ounces mushrooms, sliced
2 medium onions, diced
1 (20-ounce) sirloin steak, cut into 1-inch strips
Flour for dredging
1/2 cup red or white wine, plus more for deglazing pan
16 ounces beef stock
1 pint sour cream
1 tablespoon Worchestershire
Salt and pepper
Egg noodles or rice as an accompaniment
Garnish: parsley

In a hot saute pan melt butter and saute the mushrooms first then add the onions. The mushrooms take a little longer. In a separate pan brown strips of sirloin that have been dredged in flour. Set aside. When the onions and mushrooms are done, deglaze both of the pans with a little white or red wine and combine all ingredients into one pan. Add 2 cups beef stock, white wine or water and 1/2 of the pint of sour cream. Simmer for 30 to 45 minutes. During the cooking the sour cream will separate and some of the butterfat will become visible. This is normal, just stir the pot. Just before serving add the balance of the sour cream, stir to combine. Serve over noodles or rice pilaf and garnish with parsley.

will he eat veg if they are done in a recipe??
if so try the following:
Have you thought of making a cottage pie-without the cheese topping? i normally chop an onion into mine & add choped tin tomatoes(strained so not much of the juice is in with the meat) or try using a tomato puree made with a small amount of bisto gravy granuals to make the sauce a bit tasty, you can also add a few drops of lea & perrins worcester sauce,add part cooked veg into the mix before you put it into the casserole dish, if he will eat potatoes then slice rather than mash them across the top. ive never had any complaints from my family when i try this with them.

Fish/chicken/pork/ beef your choice, with a side of pasta which you cook for only a couple of minutes or till a bit brown in olive oil and add your favorite spices, garlic is great but if you plan to have some fun after I wouldn't recommend it. You have to keep stirring it on high heat and only put a little bit of oil.

P.S it's best with fish.

Braised Beef Roast in Wine Vinegar
Brasato all'Aceto di Vino

SERVES 4

I make this braised roast using an old homemade red wine vinegar, but any good-quality commercial brand will lend the right zing to the sauce.

One 2-pound top round roast
2 cloves garlic, slivered
Fine sea salt and coarsely ground black pepper to taste
1 tablespoon olive oil
1 large onion, diced
1/4 cup red wine vinegar
1 tablespoon minced flat-leaf parsley
3 tablespoons minced fresh basil
1 large carrot, peeled and shredded
1 tablespoon tomato paste
2 tablespoons dry red wine

Dry the roast well with paper towels. Make slits all over the roast and insert the garlic slivers. Rub the roast with salt and pepper.

In a Dutch oven, heat the olive oil over medium heat. Brown the roast slowly on all sides. Add the onions and cook for 5 minutes, or until they begin to wilt. Add the vinegar, parsley, basil, and carrot, and cook for 5 minutes.

Mix the tomato paste and wine together in a small bowl and add to the roast. Bring to a simmer, cover, and cook for about 1 hour and 45 minutes, or until a knife is easily inserted into the meat.

Remove the meat to a cutting board and let rest for 10 to 15 minutes. Strain the pan juices through a sieve set over a bowl, pressing on the solids with a wooden spoon to extract as much liquid as possible. Set the pot aside.

Cut the roast into ¼-inch slices. Return the meat to the pot, add the strained juices, and bring the juices to a simmer. Serve immediately, with some of the juices poured over the meat.

Note: For the flavor of Emilia-Romagna, substitute Balsamic Vinegar in place of the red wine vinegar.

SERVES 4 TO 6 PEOPLE AS AN APPETIZER

1 tablespoon unsalted butter or 1/2 tablespoon butter and 1/2 tablespoon Colavita™ Extra Virgin Olive Oil
1 medium onion, diced
1 cup Arborio rice
5 cups vegetable broth
1 pound asparagus **
2 tablespoons unsalted butter

Melt the butter in a large frying pan and sauté the onion until it is transparent. Add the rice and mix it with the butter to coat the grains; cook until the rice looks toasted and has a light caramel color.

Start adding the broth, a little at a time, stirring constantly. When the liquid is absorbed, add a little more of the broth and continue until all the broth has been added.

Pour the completed mixture out onto a buttered marble board and smooth it to a depth of 1/2-inch. Try to form the risotto into a 6 to 9-inch square so that the serving portions will be fairly symmetrical. Lightly score the top of the rice into 3 to 4-inch squares. Allow the mixture to set up for 5 to 10 minutes.

Clean the asparagus and discard any tough ends. Slice them into bite-size lengths, cutting them on the diagonal. Sauté the asparagus in the same frying pan until the tip of a knife penetrates easily. Reheat the serving-size squares of risotto and top with the asparagus. Serve immediately.

** Can be omitted.

3lbs boneless skinless chicken breast, cut into serving sizes
season salt
lemon pepper
flour
1 stick melted butter
crushed Ritz crackers
Sprinkle chicken with season salt and lemon pepper. Roll in flour. Roll in melted butter. Roll in crushed Ritz crackers, you can stretch those with crushed barbeque potato chips. Place in foil lined 9x13 pan. Bake for 45-60 minutes at 375 degrees or until its done. Too long and it gets dry.

In a medium saucepan over medium heat, blend the milk, water, chicken bouillon, beef bouillon, and cornstarch until the bouillon cubes are dissolved and the mixture is thickened. Serve with the pork roast and potatoes.
