Do a french meal, ive done this b4 and it's relatively easy.
Chicken Cordon Bleu
Pound some chicken breast to about a 1/2 inch thick
Dip in melted butter
Stick a slice of ham and Swiss or some other white cheese in the center
Roll up and dip in butter once more
roll in breadcrumbs and stick with toothpicks to hold it together while it cooks.
cook on 350 till done.
Serve with angel hair pasta or salad.

It is a simple one pan, elegant meal. The wine reduces to a luxurious sauce. Plenty of vegetables and no salad needed.

I tame it down and use either 2 or three chicken quarters. I forget.. just what fits in my covered skillet as I am cooking for two.

Also, try it (or any recipe for this occasion) in advance so you don't get surprised and flustered.

Pair with a nice chardonnay.

Depends? Does your 'friend' like shell fish? If so, I'd recomment eating king crab legs (dip in melted butter and a squeeze of lemon) and a simple rice dish. Or go for shrimp. They can be cooked very quickly with many many types of dressings or mariades and an elegant vegi. But, don't forget the wine & candles!

Grill some chicken breasts in the frying pan on the oven in a little bit of olive oil.

In a blender mix a handful of baby spinach, a bit of olive oil, red wine vinegar splash or two, and a favorite spice (basil or rosemary are delicious with dark greens), blend it, add oil till desired constincy, pour over chicken on the plate.

whole wheat pasta, store bought marinara sauce, cut up ham, and whole basil leaves for a delicious pasta. You could offer to wipe off their chin when they drip.

Grill 2 nice 1 in thick slices of fresh Tuna.
Serve with pesto sauce or tarter, Grilled brown garlic bread with butter and fresh garlic.
Nice Pasta with 3 cheese sauce on the side of the dish.
2 glasses of a nice white wine or wine cooler spritz. (1/2 wine cooler 1/2 7up in glass over ice with a lemon twist.
tie ribbon on base of glasses and put a nice flower touch up both on plate as garnish and on table in a vase.
For desert serve a New york cheese cake with lemon sauce and twist decor.
Relax.
