Thats a hard one! Here are a few of my faves:
lemon juice, salt, pepper and zaffron and olive oil
butter,lemonrind*grate the skin* ,chili flakes and corriander
honey, chili flakes and lemon juice and oil *grapeseed is amazing with this*
BBQ sauce, honey, bbq powder * touch of melted butter if chicken has no skin
or just buy ready made marinades if you havnt got the time. if you use any of the above and it doesnt coat the chicken well, add a bit more olive oil. Also, let them marinade at least 30 mins.

Margarita Marinade
Ingredients
6 tablespoons frozen margarita drink mix concentrate, defrosted
2 tablespoons chopped fresh cilantro
2 tablespoons vegetable oil
4 cloves garlic, crushed
2 teaspoons ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
Directions
In a glass jar with a tight-fitting lid combine marinade ingredients; shake to combine. Use with beef, pork or chicken.

Teriyaki Marinade
"Marinate chicken, steaks, or other favorite meats in this marinade for at least 2 hours before grilling. Enjoy!"
Original recipe yield:
3 cups

INGREDIENTS
1 cup soy sauce
1 cup water
3/4 cup white sugar
1/4 cup Worcestershire sauce
3 tablespoons distilled white vinegar
3 tablespoons vegetable oil
1/3 cup dried onion flakes
2 teaspoons garlic powder
1 teaspoon grated fresh ginger
DIRECTIONS
In a medium bowl, mix the soy sauce, water, sugar, Worcestershire sauce, vinegar, oil, onions, garlic powder, and ginger. Stir together until sugar dissolves. Voila - marinade!

The best marinade for chicken is the one you like best, of course. Personally, my favorite is barbecue sauce thinned with cola (not diet, the sugar reacts with the meat.) I often stir a little crushed garlic into it, too.

1 bottle zesty italian salad dressing and 1 bottle Worcestershire sauce
This is enough for about 3 lbs. of chicken.
Marinate 2+ hours, then grill or bake.
Discard leftover marinade, since it has raw chicken juices in it.

The best I've EVER tasted was the Good Seasons Italian dressing u buy in the envelope, not the already prepared. I use red wine vinegar in place of white vinegar. I don't know how it tastes with apple cider vinegar tho. Of course use the oil of your liking but I use either olive or canola cuz they are healthiest. But I like the original I said. Tastes great on grilled chicken breasts too. I went to a Superbowl party & had some there & asked the hostess what she used & it was the Good Seasons mentioned above. PLEASE PLEASE DON'T USE THE ALREADY MADE ITALIAN DRESSING IN THE BOTTLE. I tried it & it wasn't even close. No brand. Not even Good Seasons. i

One I like is something fruity with soy sauce and sherry. If you have leftover packets from a fast-food place or Chinese takeout or something, you can use their sweet sauce, or some pineapple juice, or juice from a can of peaches, or apricot jam, candied ginger, or whatever's around. Rinse out the chutney bottle with water, maybe! You can add water to make enough to cover the chicken. I know that's all very vague a good glug, glug, glug, of sherry, and a couple of splashes of soy sauce, and the sweet stuff -- but it's always good, and it uses up whatever you have in the house.

a few years ago a friend and i came up with our own basic marinade and everyone who's tried it thinks it's great. we use italian salad dressing, teriyaki sauce, garlic, brown sugar and black pepper (listed in order of most to least amounts) and marinate over night. no particular measurements. i've added ginger to the mix on occasion and it was pretty tasty :)

Mix equal parts of Sprite or 7-UP with vegetable oil.
Add crushed garlic (and a few herbs if you like).
Marinate the chicken several hours or overnight.
Cook over medium charcoal, turning frequently, until the juices run clear.

i like to use italian dressing. just pour it over the chicken and let it sit for a couple of hours. then cook the whole thing in the oven. the leftover dressing can be used over pasta. it tastes great and you can make it pretty quick if you put it to marinate while at work.
