i read a while ago about this, and am in the same situation. i gave up trying to find a fuse to disconnect (because other more important things were in the same circuit).
you could look at completing the circuit in the seat and/or seatbelt in advance - because it goes off once you are sitting down.
i eventually found it too hard trying to work out what to do.

If you really do wear your seat belt then you shouldn't have a ding, ding, ding. I have a liberty and it only dings if the belt is unfastened. I love it as it lets me know if my passenger unbelts. I won't drive without belts fastened, I've seen too many, unbuckled, dead drivers and pasengers in wrecks.

A. its in your owners manual
B' i'll tell you anyway. starting with the kkey off and your seatbelt buckled and the doors closed. turn the key on, wait for the seatbelt light to go out. unbuckle and buckle the seatbelt 3 times within 10 seconds ending with it buckled, and immediately turn the key off, and you will hear a chime. the reminder is now turned off.

well it is integrated into other systems so to deactivate it by any other means other than wearing your seat belt would cuase even more problems than just driving legally and saving money on sealt belt tickets.
