I know that you already probably have it, but Kosher Salt and Fresh Black Pepper (to be cracked or ground in a pepper mill) are the MOST basic.........I'm assuming that by Red Pepper, you mean cayenne pepper?? ........I also like to have onion powder on hand if I'm making a dish that I need the flavor of onions in but the texture won't work (think: deviled eggs, I pipe the mixture into the whites of the egg with a pastry bag, and chunky pieces get caught.......that's where the dill, onion and garlic powder work wonders) Enjoy!!

Rosemary is good with oh so many foods. I especially love it on chicken. One I must have in my kitchen is an Italian mix for pasta. Also Chili Powder, Whole Cloves for hams. Sage for pork and stuffings. I also use dried onion flakes in some recipes. Those are just a few simple ones I can think of right now.

Peppercorns and a grinder
Dry mustard
Kosher salt
Tarragon (great with veggies) and Bearnaise sauce
White pepper (for cream sauces and other light foods that you don't want to see dark specks in)
Rosemary--Because it is wonderful inside roasted chicken or with pork roasts

"We NEVER eat fish so we dont really need rosemary. "
But how it is with spagetti milanese ?? A little bit roasemary is good for your health.
Some more herbs and spices.
Caraway ( Sauerkraut , potatoes)
tarragon my favourite ( for all)
mougwort for fat roast, ( pork, duck, goose)
savory (Beans, peas, potatoesoup)
juniper berries ( Sauerkraut, carpen)
pimento ( Grühnkohl mit Kassler = that dish makes all nothern Germans mad [curly kale] )
In spring I have ramson in the garden.
So that was it for the moment.
Greetings from Hamburg, Germany

Cumin and chili powder are the two i always have to replace. thyme. Rosemary is good on other things besides fish, you can put it on cornish game hens, pork loin, pork chops, and whole chickens
