Pork Chops "Cordon Bleu"
4 (2-inch thick) rib pork chops
2 tablespoons Dijon mustard
Kosher salt and freshly ground black pepper
4 (1/2 by 3-inch) slices fontina
8 thin slices Canadian bacon
2 cups panko bread crumbs (Japanese-style)
1 cup all-purpose flour
3 large eggs, beaten
3 tablespoons vegetable oil
Using a small knife, make a pocket in the rounded side of each chop. Spread some of the mustard into each pocket. Season the chops with salt and pepper, inside and out.
Wrap each slice of fontina with 2 slices the bacon, forming a package. Tuck 1 cheese package into each pocket. Using toothpicks, pin the pockets shut.
Put the panko in a large bowl. Place the flour and eggs in separate flat bottomed bowls or lipped plates. Working with 1 pork chop at a time, dredge it in the flour, dip in the egg, and press all over into the panko. Transfer the chops to a parchment paper-lined plate. Repeat with the remaining chops. (The pork chops can be prepared up to this point and refrigerated up to overnight.)
Preheat the oven to 400 degrees F.
Heat the oil in a large skillet over medium-high heat. Add the breaded chops and cook, turning once, until golden brown. Transfer to a baking sheet and bake until cooked through, about 20 to 25 minutes.

Yum...porkchops with potatoes and gravy does sound good! I like to stuff mine with a bread dressing or a rice mix (you can do this even if they are thin) and fry to brown then, bake (about 45 min on 350%). How about a baked potato instead of mashed or scalloped. Another recipie I learned from some men for our company that were in town and staying at a hotel...they used a hot plate. Make spaghetti sauce and slow cook your porkchops in that. Goes great on the side, or save one or the other for the next night. You can put meat in your sauce...or not.

Here's what you do. Take enough pork chops, creamed corn and biscuits, Home made or canned your preference, to feed however many you are going to need. Pour the creamed corn in the bottom of a baking dish, put the porkchops on top of the creamed corn. Bake for 30 minutes at 350 degrees. The last 10 minutes of baking put the biscuits on top of the pork chops and cook until done. Oh so good!! My husband and kids love it.

This is the recipe that is popular in Ukraine and Russia.
-Beat the boneless porkchop with a meat hammer (tenderize it basically
-Mix some eggs in a bowl (you can decide how many you need along the way) put pepper and salt into the egg mixture
-coat the tenderized porkchop in egg
-fry it
Its going to be very very good.
Optional: you may add crumbs on top of the egg to make it more crunchy.

You can brine your pork chops for about 3 hours or overnight in salt water then rinse and salt and pepper them, cut up like 3 cloves of garlic and put these on top of the chops and let marinate in the fridge, when ready to cook scrape garlic off (as it will burn) and coat with flour in which you added salt and pepper. Fry in a skillet with oil until golden brown. Serve with mac and cheese and corn, or rice and peas and corn. You can also bake them in a baking dish with barbecue sauce which is pretty good too, but it take like a hour or more too cook. If you get thick chops you can cut a slit and stuff them, you can use stove top stuffing in which you added some raisins to, this is also very good. You can bake these. just secure slit with a toothpick.....good luck....

Here's a simple way to fix 'em. Brown them on both sides in hot oil in a skillet, then turn the heat down to medium and spread two tablespoonfuls of apple butter (NOT apple sauce) on the top. Add a half cupful of apple juice or apple cider, cover and let 'em simmer on medium low heat for 45 minutes. Serve with a combination of brown and wild rice cooked in chicken broth. Don't forget to spoon the apple butter from the skillet over the cooked chops.

Mix a can of cream of mushroom soup with an envelope of instant onion soup. Spread over pork chops. Cover with foil and bake at 375 F for about 40 minutes. You can also stir in your favorite herbs and spices before adding the pork.
