i am about to embark on a 3 week detox, so any ideas to make a salad more exciting...

Just think of all the salads you enjoy and do them in chop form. Not sure what foods you can have, but i have chopped these salads with great success:

cobb - blue cheese, bacon (hmmm, if no meat i guess leave out), tomato, avocado, ranch dressing

oriental - mandarin oranges, snow peas, water chestnuts, sesame seeds, cilantro, red onion (add chicken when doing meat), then sesame ginger dressing (paul newman does a really good low fat one)

southwest bbq - corn, cilantro, onion, green pepper, pinto beans if you can have them. For the dressing mix a tad of bbq sauce into a premade balsamic viniagrette or ranch if you prefer. You can sprinkle fried onions on top and add chicken or shrimp when not detoxing.

I love to chop jicama, apples, onions, and snow peas with romaine and use a poppyseed dressing.

Also, doing a layered chopped is fun...one layer of green peas, one layer of chopped egg, one layer of grated carrot, one layer of green/red bell pepper, etc....

also, not chopped, but a great salad..just use your mixed greens and put whatever veggies you like. If you can add some feta and chicken, do. For the dressing you saute some mushrooms, then to the hot pans add some more oil (for your dressing), then chopped onions and saute, then some balsamic vinegar, then some brown sugar, until it is all hot and emulsified together (don't over cook). Then pour it over your salad and mix, it's great.

I also like to make a fajita salad. You can leave out the meat and saute onions, bell peppers, mushrooms, and corn...then use a scoop of guacamole, a scoop of sour cream, a scoop of salsa for your dressing....

No meat? I would chop dark lettuce like romaine to start; top with chopped onion, tomatoes, cucumber, bell pepper, celery, carrot, black and green olives and dill pickle. Dress with a low cal vinagrette, made with vinagar or lemon juice, olive/safflower oil, pinch of sugar & paprica, salt, pepper and a dab of English mustard, a few drops of water, shake well and pour over or serve on the side.

Finely chop the following, onions, cucumber, tomato, lettuce, purple cabbage, broccoli and celery. Add salt substitute, fresh cilantro and coarsely ground pepper. This is wonderful and has almost a salsa consistency. Very filling and very very healthy. You do not need a dressing.

Make sure to soak the leafey veggies you put in it in cold water to make them nice and crisp, and add cheese. I personally prefer ranch or itallian dressing with my salads, everything else is a waste.

you get lettuce and tomatoes and cucumbers and peppers and carrots and cheese and croutons and onions and chop up some boiled eggs on it =]
like omg it's so freakin easy and yummy =]
ooo and u need some good freakin dressing. i prefer cheesey italian [or something like that] or caeser [my favorite]
