What about the eyes? How does it taste like?

Yes. They are crunchy. In REAL Chinese restraunts the heads are often left on. I have many a fried shrimp head. Like I said, crunchy. Just taste like shrimp.

It's actually a great thing for everyone to try. After deheading all of your prawn/shrimp, take the eyes out and batter, then fry to a golden brown and enjoy!

I never tasted them but they are edible and cruncky.
I normally de-head the shrimp and use the heads and sheels to make a broth for a shrimp sauce or shrimp chowder.
