sit ups build some serious muscle and they are not good for your back - you can easily injure yourself plus - its very hard to do them correctly.
crunches build lean muscle - dont help yourself with arms or head, fingers just slightly touching ears (to get arms off the way) and lift your shoulderblades off the floor looking at one point in the ceiling (dont let it out of sight), the only muscles that are working are your abs -do 15-25reps 2-4 sets 2-3 times a week.

The best exercise is crunches
The correct way to do them is to put your feet on a chair or the bench

Have your knee at 90 degrees, curl up, do not pull yourself up with your hands on your neck or head.

This isolates the abdominal muscles and does not allow the hip flexors to work, which is what happens with sit ups and straight knees.
