I'm going to flatten a piece of pork (i.e. Good Eats, Flat is Beautiful) to about 1/4-1/8 inch, sear it, and roll it with a stuffing. Which cut of pork is best for this? Also, if it's thin enough, will I need to cook it more after I sear it?

I actually figured out the recipe, I'm just using the flattening method from Good Eats.

Pork tenderloin cut into medallions, then pound them flat. I would put the stuffing inside, roll up and secure with tooth picks and bake in a baking dish. But you can use this method that you saw if you wish.

Pork tenderloin, cut it into pieces just a little thicker than 1/2 and pound them until you have them as thin as you want.I always stuff them with cheese, a carrot stick(thinly sliced), and a thin slice of pickle.
