I'm not sure if it's the best, but it's fairly easy and I find it very tasty and so do my guests:
Brown 1 lb of ground beef and 1lb of ground pork
pour off the fat
Add two large chopped onions
and four minced garlic cloves and cook 5 minutes on medium
Add five stalks chopped celery, a chopped green pepper and a chopped red pepper... stir it up
Add a large can of chopped tomatoes and a large can of kidney beans(drained)... stir it up
Add a small can of tomato paste, a few splashes of hot sauce, half a bottle of beer, red pepper flakes, chili powder, cayenne pepper and some oregano. Also some fresh ground black pepper.
Stir it up and bring to a boil, then reduce heat to simmer and let it cook for 20 minutes, stirring occasionally... Just before you serve it, add some large chunks of chopped mushrooms...
I also add shredded cheese on top of each bowl before I serve it... you can play around with the spices to your taste, depending on if you like it spicy or mild.
Usually chili tastes better the next day, when it has been re-heated.

Here's one for the slow cooker:
Chunky Chili *
1 pound lean ground beef
1 bay leaf
1 small onion, chopped
1 t. Worcestershire sauce
1 t. salt
2 cans (8 oz. ea.) tomato sauce
2 t. chili powder
2 cans (15 oz. ea.) kidney beans
Brown the ground beef in a skillet. Drain the kidney beans. In the crock pot, combine the beef with remaining ingredients. Cover and cook on high for 2 to 3 hours. Be sure to remove bay leaf before serving. This is a very thick chili. Add 1 cup of water to make a thinner chili. Serve with rice or corn chips and cheese.

"Real" Chile has NO beans (baked beans? OMFG Gross!), onions, mushrooms, tomatoes, green peppers greek seasoning, chocolate, cheese, beer, celery,coffee, etc. in it.
You fry your chili meat (coarsely chopped - never ground) the meat can be any sort of red meat like beef, bison, goat,etc.; throw in your chili powder (your choice- as much as you want) let it simmer as long as you want then if is needs some liquid add some water. You thicken the dish with some cornmeal as needed.
BTW I never eat it that way, but it is the original way it was cooked.
Oh, and Cincinnati is NOT the chili capitol of the world - chile on pasta?!! "sweet" chili I think I'm gonna barf.

Thank you for asking this question. I want to try silversurfer and periwinkle's recipes. Just think putting on the slow cooker recipe and coming home to a hot meal -- as long as you remember to plug in the cooker! This is going to be a hard one to pick best answer on!

Baked bean chilli;
1.5 lbs beef mince
1 large onion
2 tbsp oil
12 oz button mushrooms roughly chopped
3x215g cans of baked beans
2x400g cans of chopped tomatoes
290g can of kidney beans
1 tsp chilli powder
1 tsp paprika
1 tsp cayenne
salt and pepper
1. Brown the mince in a non-stick pan.
2. Remove the mince from the pan, draining any fat, then add the oil and onions to the pan and gently fry until softened, but not browned. add the mushrooms and cook until soft.
3. Add the mince and baked beans tomatoes and kidney beans, stir in the paprika, cayenne,and chilli powder and simmer for 45 minutes season and serve with rice or baked potato.

1 lb ground beef
1 lb ground pork
1 lb sliced sausage
8 oz bacon, rough chopped
2 large onions, rough chopped
2 bell peppers, rough chopped
1 large carrot, shredded
assorted peppers according to your spice level
2 oz unsweetened chocolate
cummin, coriander, and other spices to taste
16 oz tomato paste
32 oz crushed or stewed tomato
1/4 C vinegar
1 Tbs prepared mustard
up to 1 lb frozen corn
8 oz dark beer
Beef broth to control consistency
Render bacon and remove from pan. Sautee onions in bacon grease, remove from pan. Brown sausages then remove from pan. Brown ground meats, seasoning to taste.
Throw everything into a large pot and simmer 2 hours.

buy grated chilles depending how hot u want. it is available in the market. based on that quantity, u add vinegar and salt for a longer preservation and it gives a good chilly flavour ,pungent and smelly chilli. all the bestr!
