Donna's Cocoa Bean Brownies
If you like super fudgy brownies, you will love these cocoa bean brownies. They are made without any flour and are gluten-free. Don’t tell anyone they are very high in fiber and made with beans. You have to try them to believe how good they really are!

1/2 cup cocoa
1/3 cup canola oil
1 can (15 ounces) black beans or kidney beans, drained
1-1/4 cups sugar
3 eggs
1/2 teaspoon baking powder
1 teaspoon vanilla
1/2 cup chopped toasted walnuts (Optional)
Preheat oven to 350 degrees. Butter an 8 x 8 inch or a 7 x 11 inch baking pan. In a large food processor or blender, combine all ingredients except nuts. Blend well until very smooth. Stir in nuts. Pour batter into pan. Bake 35 - 40 minutes or just until set in the center. Do not over-bake.
For a flourless, chocolate cake and an elegant presentation, pour batter into round cake pan. Cut into wedges and serve with raspberry or strawberry sauce.
Note: The brownies can be reduced in calories by substituting the 1 ¼ cup sugar with 1 cup sugar and 1/4 cup Splenda.

I have found that Whole Foods has gluten free desserts in their freezer section, i.e. pies, brownies, cookies. I also found cake mixes and icings. Check out this website, too
http://www.glutenfree.com/home.aspx. It looks great. I have bought things from a retail outlet but found the website on the back of the packaging.....

U can turn many desserts into gf by just using GF cookies for a crumb crust (liek Envirokidz Vanilla Animal Cookies) or by using a GF pie crust.

a good friend of mine wrote a vegan, wheat free/gluten-free cookbook that has lots of great dessert recipes. you could also email her directly from her website: www.thehappyvegan.com , and she'll give you some great ideas that you can make! you can buy her book through the website if you are interested.

I have a recipe for fudge that uses chocolate chips that I adapted from "La Dolce Vegan" by Sarah Kramer. Tropical Source makes a type of chips that is gluten free.

Well, if you were in the UK, i think (last time I bought it) Angel Delight is gluten free. Most of the copies aren't though.

puddings and jello.. or a pie filling in phylo cups
on the back of a peanut butter jar is a recipe for cookies that contain no flour..I think it is squirel peanutbutter, but I have Jiff right now so I can't look it up for you..sorry but go to their website and see the recipes
