Herb-wise~Oregano,Parsley, Basil and then of course seasoning~ garlic,salt &pepper. Plus a dash of Nutmeg =)
By the way adding a couple italian sausages; crumbled up and fried with your ground beef will make it a winner.

I never make it the same way twice, but I have used low fat cottage cheese instead of riccotta when we're counting calories. It does taste a little less rich but when you've been dieting anyway, everything tastes good...LOL.
I have also added (not all at the same time) spinach, linguica, leftover meatloaf, zuccini and summer squash...whatever I had left from the night before.
Sometimes I use different cheeses too. I always use mozzerrella, but then I'll add cheddar or even mexican taco cheese.
