If you stay with the same company(s) and pay more, mostly you can.
But you may end up paying a lot more as a change in flights may be added to the difference in holiday prices.
On top of that, most holiday companies state that any change in plans after booking will be charged a change fee, often higher when the date of travel is near.
But asking does not cost, so phone in.

Several people I know had to change dates or cancel because of an emergency, and in all cases the travel company did change with no cost added.

You should check with the agent you have booked it with. You might find something on this site at a very good rate rather than paying extra for upgrading. I have used them before and it is hassle free on line. All you need to take with you is your email booking confirmation. http://www.onevacationclub.com/benefits-holiday-shop.html
Good luck.

Read the small print - it will tell you exactly how many days before departure you can cancel and how much percentage you will lose if you cancel.
