It was alcohol because that was a staple of the time. Remember, these people were living in a harsh environment, and using ancient techniques for growing, harvesting, and raising animals. Add to that the lack of refrigeration, food storage, and preservation techniques.
Any food that could be stored for a long period of time became a staple. Wine naturally preserves itself due to the presence of alcohol and sugar. All ancient peoples drank a lot of alcohol, because it contained things they needed, and could be stored for long periods of time. In addition, because of the presence of alcohol, wine would have had far fewer bacteria and parasites that you would have found in drinking water, or even in fruit juice if it was a few hours old.
The idea that drinking alcohol is wrong is a new idea, originating mainly from the temperance movement of the 19th century, a time when food production and storage had leaped far ahead due to the industrial revolution.
So, in short, it was wine because that's what people drank back then.

There was some big reason to change to alcohol according to Islamic teachings. Please read an extract from my book.
Once the landlord who was keeping Mary and Jesus in his home with respect and care, invited the people and vine was to be offered to the people as per their custom but they found all pots empty. All people became angry but Jesus knew this and put his hand on cover of pots and all were filled with vine. People became very respectful to Mary and her son on seeing this. And he did this to please his benefactor landlord.

Jesus wouldn't condone drunkenness it would contradict his teachings , It was fresh made wine that didn't have the time to ferment yet .
