There's no such thing as too old in most cases. 7 is certainly not to old assuming they are in good health. Health issues or extreme age might be a problem but at the same time spaying or neutering your cats might be in their best interest and out way the risks even then.

Talk to your vet to make sure they are in good health, if so go through with it, they can get cancer and infections among other things. Besides the pet over population problem is bad enough as it is and cats are notoriously hard to find good permanent homes for.

Just be sure to have pre-op blood work done for their safety, some vets still do not do this. You wouldn't go into surgery without it why should they? This way they can be sure everything is good to go and be positive on the correct amount on anesthesia to give for the surgery. Also make sure you are going to a reputable vet, not some hack. They do most certainly exist.

Seven years old should not be too old to be neutered if there are no health problems. I've had two adult male strays neutered that I guessed to be about 5 years old at the time of surgery.

The neuter surgery is done under general anesthesia and takes only minutes. They are usually released from the hospital that day after they wake from sedation.

Your vet may wish to do some pre-surgery blood work as a precaution.

Too old would probably be around the age of 15 or higher, as it's harder for their heart to take the anesthesia for the operation.

Seven is about middle age for a cat so it's not much of an issue, he's not old at all yet.

hmm..i've never heard that ever, but, i've also never known anyone to have a cat that old not neutered. i would think you could answer this question very easily by a simple phone call to your vet. i would assume it would be absolutely fine, but they could tell you for sure.
good luck!
