There is a great comedy club in Times Square called Caroline's. Check into it. They have a limited menu, but the comedians are always great, and it's not too expensive. They have a small restaurant and bar outside of the actual comedy cellar, and then, of course, there is Times Square.
W Hotel in Times Square has a beautiful bar with lounging areas, etc.
If she is more of a club type of person, the meat-packing district is LOADED with lounges, clubs and bars. You can't go wrong, and if you don't like one place, you can just hop next door to the next place. It's really convenient.
For dinner reservations, I would suggest Tao Restaurant. Food is great, atmosphere is out of this world, menu pricing is affordable. They also have great drinks.
If you are looking for more of a dinner and a show night, Lucky Cheng's is really fun, but it's a drag queen burlesque show, so keep in mind there will be men dressed like ladies. But it's a lot of fun, and it's got a karaoke bar downstairs and a tiki bar nextdoor, a hooka bar around the corner. SO FUN! Or you can also try Jeckyll and Hyde's.

Check out the Circle Line. Boat tour around Manhattan. Sounds hokey but great with a group,inexpensive and hilarious if you get the right guide/announcer. Check out Stout NYC near Penn Station for casual fun,food party. Good Luck!
