I will be taking a gap-year next year, and I want to travel to different countries and work in each one for a month. Any ideas on the places where I could look for one-month jobs, what countries should I visit (not too expensive to live in), and what are the job opportnities you know of?
Thanks

Your first step should be to find a country, or several countries, for which you can get work permits.
If you work without a permit it will always be work you would not do at home, often dirty, dangerous and poorly paid.
As a student you can get a students visa that comes with a work permit, that allows you to work and travel, in many countries, one at a time though.
If you come to Europe you can chose work in one country only, but travel in almost all, as they are all near.
France, Germany or Switzerland are positioned to allow you to do that, but I do not know how easy it will be to get visa and work there.
In Australia there are many people traveling around with student permits, taking a whole year to see the country.
I have met many of the people working on a student permit in Australia, most of them did get jobs on a day by day basis, but some did get offers for longer jobs, mostly for half a year at a time, as au-pair or so.
Jobs for one month are rare in any country, I would not expect any to crop up if I were you.
