Death by Chocolate
1 box chocolate cake mix plus ingredients according to box
4 sm boxes of Instant Choc. pudding
4- 8-oz. cool Whip
* oreo cookies crumbs (optional)
* melted chocolate (optional)
* chopped heath bars (optional)
* chocolate chips (optional)
This really looks nice in a glass pyrex dish or a trifle bowl.
Bake cake according to directions.
and prepare pudding according to box.
When cake is cooled.
Layer as follows:
half the cake - crumbled
half the pudding ( 2 boxes prepared)
16 oz. cool whip
optional ingredients
Repeat-
* If you want you can sprinkle oreo crumbs, heath bars, and chocolate chips on the cool whip layers. On the final cool whip layer you can drizzle melted chocolate and sprinkle oreo crumbs and chocolate chips. I added oreo cookie crumbs and leftover melted chocolate in between the layers.

This is very very easy and very good. Here's all you need:
1 box chocolate cake mix
1 small box chocolate pudding - the Heat and Serve kind - not the instant
2 c milk
1/2 c mini chocolate chips
1/2 c chopped pecans
Cook up the pudding according to the package directions. Once it's done, pour it straight into the dry cake mix (do not add anything else to the dry cake mix - no oil - no eggs - no water). Pour into a sprayed mini sheetcake pan or a 9" cake pan. Sprinkle the mini chocolate chips evenly over the top. Sprinkle the pecans evenly over the chocolate chips. Bake in a 350º oven for 25-30 minutes or until a toothpick comes out clean. Very simple and good. You can use different kinds of cake mixes with different kinds of puddings - like yellow cake mix and coconut cream pudding. I've even used the coconut cream pudding with the chocolate cake mix. The chocolate chips melt and make the "frosting" for the cake.

I make a easy one with boxed brownie mix and a can of cherry fruit pie filling (spend the extra 25 cents for the better cherry filling).
I make a 9 X 11 pan. Mix up 2 boxes of brownie following the instructions on the box, after they are in the pan, drop spoon fulls of cherries onto the top of the batter. I put 3 dollops in a row and make 7 rows long wise.
Bake at 350 degrees or as directed, add a 3-5 more minutes then the box says since they will be a moist treat. cool beofre cutting , I cut the rows of pieces so each one has a cherry dollop in the center, making 21 pieces. Top with whipped cream and a sprinkle of powdered sugar. It is really very easy and always a hit.

Try some mint chocolate truffles:
Preparation Time: 1 hour (or until set)
Cooking Time: 10 minutes
Ingredients:
200g good dark choc – broken into small bits
200g double cream
25g unsalted butter
1 tbsp demerara sugar
Few drops mint extract/essence
Cocoa powder
Method:
1. In a pan heat the cream then add the chocolate and mix until melted.
2. Take the pan off the heat and continue mixing add butter mix well.
3. Leave to cool until set
4. In a bowl add the mint to the sugar and mix well.
5. Then scoop into balls (parisienne scoop).
6. Roll the balls in the mint sugar, and then roll through the cocoa
Its really easy & they taste great. Handy for a lil sumthing after dinner!

Chocolate Trifle
1 Devil's Food cake mix, prepared according to pkg. directions (I make 2 round cakes and use one)
4 boxes instant chocolate pudding, prepared according to pkg. directions
1 large container of cool whip
Crushed Heath or Skor Bars (4-6 should do)
Kahlua - opt.
1. Crumble half of the cake on the bottom of a bowl. Drizzle with Kahlua.
2. Spread 1/2 of the pudding over the cake
3. Spread 1/3 of the cool whip
4. Sprinkle with 1/3 of the candy
5. Repeat steps 1-4
Top with remaining cool whip and candy.
Always gets rave reviews and it's really easy.
Plus you can wrap the extra cake in plastic wrap and pop it in the freezer - then you have one for the next time!

Pecan Chocolate Cake
Serves 18
Cake
2 cups unbleached flour
11/2cups unbleached cane sugar
1/2 tsp salt
2 sticks 365 unsalted butter
3 TB cocoa
2 eggs
1 tsp baking soda
1/2 cup buttermilk
1 tsp vanilla
Frosting
1 stick unsalted butter
3 TB cocoa
6 TB milk
1 box powdered sugar
1/4 tsp salt
1 tsp vanilla
1 cup chopped pecans
Preheat oven to 350°F.
Sift unbleached flour and unbleached cane sugar together in a large bowl. Bring to a boil butter and cocoa and pour over flour mixture, using a whisk to mix whole hot. Beat eggs, baking soda, buttermilk and vanilla together and add to flour/ cocoa mix. Bake for 35 minutes in a sprayed or buttered 9x13 pan. Cool the cake and let it stay in pan.
For the frosting:
Melt butter, cocoa and milk in saucepan. Once butter is fully melted, remove saucepan from heat and whisk in powdered sugar, salt, vanilla and chopped pecans until smooth. Pour mixture over cake, spreading evenly.
If desired, the shortening called for in the original recipe can be replaced by natural, non-hydrogenated palm oil shortening, such as Spectrum Naturals brand. This shortening does not contain trans fatty acids.
Also, if desired, to lower fat content one of two sticks of butter used in making the cake can be replaced by 1/2 cup applesauce. This step, however, would likely lead to a denser cake.

Heres a really easy one.
Ingredients:
Oreo Cookies
Whip Cream
Instant Chocolate pudding
Crush up the oreo cookies. Then set them aside. Follow the directions on the pudding box and make the pudding. Then seperate into coffee cups. Put the whip cream on top and sprinkle the crushed oreo cookies on top.

EASY CHOCOLATE MOUSSE PIE
1 pkg. (8 oz.) cream cheese, softened
1/2 c. Hershey's cocoa
Graham cracker crust
1 c. confectioners sugar
1 1/2 tsp. vanilla
2 c. heavy or whipped cream
Prepare graham cracker crust, set aside. Beat cream cheese and cocoa in large bowl until fluffy and well blended. Gradually add confectioners sugar; blend well. Stir in vanilla, whip cream until stiff; fold into cheese mixture. Pour into cooled crust; chill until firm.

French Silk Chocolate Pie
1 ready-made pie crust
3 oz. unsweetened chocolate, cut into pieces
1 cup butter, softened (do not use margarine)
1 cup sugar
1/2 teaspoon vanilla
4 eggs
Heat oven to 450 F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie pan. Bake 9 to 11 minutes or until light golden brown. Cool completely, about 30 minutes. In 1-quart saucepan, melt chocolate over low heat; cool. In small bowl with electric mixer, beat butter on medium speed until fluffy. Gradually beat in sugar until light and fluffy. Beat in cooled chocolate and vanilla until well blended. Add eggs 1 at a time, beating on high speed 2 minutes after each addition; beat until mixture is smooth and fluffy. Pour into cooled baked shell. Refrigerate at least 2 hours before serving. Garnish with whipped cream. Chill in the refrigerator until ready to eat.
TIRAMISU (No Baking)
1-17.5 oz. container mascarpone cheese
2 tbsp. orange liqueur (Triple Sec or Cointreau)
1 tbsp. dark rum
3 tbsp. sugar
1 tsp. vanilla extract
1 c. heavy cream
24 ladyfingers
1-12 c. brewed espresso
6 oz. semisweet or bittersweet chocolate, finely chopped
Combine the mascarpone, the liqueur and the rum in a large bowl. Gradually blend in sugar. In a chilled bowl, combine the vanilla extract and the cream, and whip until it forms soft peaks. Fold this into the mascarpone mixture. Place half of the ladyfingers in a flat baking dish, and pour half of the espresso over them. Let the ladyfingers moisten for about 10 seconds, burning them often. Do not soak too long or the ladyfingers will fall apart. Carefully lift them out of the baking dish and place on a plate. Arrange half of the ladyfingers in a single layer in a 12” x 6” baking ban. Spread half the mascarpone mixture over the lady fingers and sprinkle with half the chocolate. Repeat the process with the remaining ingredients, creating 2 layers of ladyfingers. Cover and refrigerate for at least 1 hour. Serve on individual plates.
HELPFUL HINTS: If you can’t find marscapone cheese, you can easily make your own. Just combine the following and beat with a mixer until smooth and creamy:
2 8-ounce packages regular cream cheese
1/2 cup heavy whipping cream
5 tablespoons regular sour cream
