Besides the other good ideas you've gotten, meatloaf isn't hard to make and then the leftovers can be reheated in the oven or the microwave. Baked potatoes make a good meal completer. Or parsley buttered noodles or rice or other potatoes make good sides. Store bought jarred or canned gravies can make a meal seem nicer.
Don't forget some veggies and salads. And then for dessert or just to take care of the sweets, don't forget that fresh fruit sliced and sweetened can be very refreshing. And as they say, there's always room for Jello! You can add some fruit into it before it jells or use 7-Up for the cold water part or top it with Cool Whip or yogurt.
bhg.com is the site for Better Homes & Gardens and they have lots of wonderful recipes with good directions. I don't know how experienced of a cook you are, but most of their recipes are well explained, even for a novice. Same goes for the Taste of Home website - tasteofhome.com
Enjoy this time learning more and more about cooking. Don't worry if you can't time everything to get done at the same time. Most items can set while the others catch up or you can zap them in the microwave.

are there other kids to feed? We do Hamburger/Tuna Helper about once a week- can't get easier than that. I just add a can of veggies and a salad from a bag and it's ready. My whole family- 3 generations- likes it when I make "breakfast for dinner" and it's pretty quick and easy. Fried potatoes, eggs and sometimes sliced and fried Polska Kielbasa. Get a George Forman grill- they have the little ones if it's just the 2 of you- they are great for hamburger patties, chicken breasts or pork chops. Chili or sauerkraut hotdogs with chips and fruit is good. They have frozen meals in bags that even have the meat- you just heat them in a skillet. Spaghetti is always a winner. Boil a pound of spaghetti noodles til soft. In a pan, brown a lb of hamburger (I add some frozen chopped onions and a box of sliced mushrooms) then add a jar of spaghetti sauce and a can of italian style diced tomatoes. Heat some sliced "Texas Toast" (in the freezer section)- they have cheese and garlic- in the oven, add a bagged salad, and you've got most guys favorite meal! Hope these few suggestions help. Crockpot recipes are lifesavers. Putting a brisket in takes less than 15 minutes and it can cook all day. Another good one is picking up a bag of frozen meatballs for spaghetti. Soups are pretty fast and easy. Even a tub of pesto and a package of tortellini makes a good meal. And all you have to do is grab a bag of packaged salad.

Keep it simple and stretch one meal into two:
Pot roast with veggies in a crockpot...next day you can have roast beef sandwiches on a crusty bread served with chips and fruit.
Baked chicken/rice/veggie...next day you can take leftover chicken and make quesadillas with sour cream, guacamole and hot sauce.
Meatloaf with mashed taters/veggie...next day meatloaf sandwiches with mustard and fries.
Lasagna - should be enough for leftovers the next night.
Breakfast for Supper - always a good toss in the mix of ideas.
Frozen fish filets (unbreaded) is another easy source of "throwing" a meal together with some lemon pepper, a bit of butter and wrap up in foil to put in the oven...baked potatoes (twice baked potatoes are yummy), and a veggie (fresh or cooked).
Hero Night - Sub long bread rolls with a "build-your-own" tray set up: cold cuts/veggies/condiments laid out with a potato salad/cole slaw
Flour or corn tortilla tacos with meat of your choice/spanish rice, ranch style beans.
Taco Salad
Hmmm...could go on and on.

i would just start out with easy things first until you get more comfortable with the idea of being in charge of cooking. I know that i had a hard time when this happened to me. do things like dogs and mac and cheese. fries and hamburgers, soup and grilled cheese. there are tons of easy recipes just take a look some afternoon and see what you have available to you to cook with. good luck.

Quick and easy there's always Ramen or Mac & Cheese, but is you want real food I'd check out the website that I posted below. It lists anything from the easy to the complicated. It even allows users to submit their own recipes.

Take tortillas, and provolone cheese and some kind of meat that you like. My daughters like chicken, Sandwich meat ham, and bologna. (not all of them together, pick one)
heat a skillet with butter (margarine)
take a tortilla
Put a slice of provolone cheese (or any kind you like)
Put your choice of meat
Fold the tortilla in half.
Put in the skillet and brown it on both sides.
You may have to add butter as you cook more of the tortillas.
