Because the Bible is no different than any other religious text, it only reflects the ideas of a certain people/ their needs/ desires/ etc. Why would anyone not believe the Bhagavad Gita but would believe the Bible? That would be an equivalent question.
Nostradamus existed. His contrains have been proven. He gives names and dates. He was a psychic, and a darn good one at that !

Nostrodamus wrote of things that would happen in the future and many of them have come about.
The compilers of the Bible spoke of old prophecies that had come to fulfillment in the past, even before they existed, instead of prophesies that would come to pass after they had written that have come to pass. There have been no biblical prophesies that have come about in nearly 2000 years, now.

Because it is easier to belieeve something from man than something from God. Also God holds you accountable for your actions. Nostrodamus is dead. Christ is alive.
