I would cook and crumble the sausages with some onion. Cook some rice. Mix the sausage, onions and cooked rice with a little bit of salsa or rotel tomatoes. Take the peppers, cut around the stem and take the inside out. Spoon the mixture into the cleaned out peppers. Set the filled peppers in a casserole dish, cover, and cook at 350 - 375 for 30 -45 minutes.

I like stuffed peppers. You can also use a small pasta instead of rice. Like small elbow macaroni.

Usually ya use ground beef with it as well.... I suck at writing a recipe/directions but here goes :P

Take the sausages out of the casings(skin) and break them up in a frying pan(cook like ground beef), add some Chopped up Onion.. then add a small can of corn kernels w/liquid from can.

If you have ground beef, cook that with the sausage =)

When thats done add 1/2(reserve the rest) of a 26oz jar of chunky tomato sauce to the pan and season it to taste with salt and pepper.

Then add 1/2 a cup of uncooked rice and 1/2 a cup of water to the pan and cook covered for about 20 minutes until the rice is done.

Peppers

While that's cooking take your peppers and cut them lengthwise, clean out the seeds and such.

Bring a large pot of lightly salted water to a boil. Add pepper halves and boil 4 to 5 minutes until tender, but still crisp. Place the peppers on paper towels to drain.

When the rice and meat are done cooking,Spoon the meat mixture into the peppers, place the filled peppers into a baking pan. When you are done filling the pan with peppers add a little bit of water to the bottom of the pan.

Bake on 350F for about 25-30 min.

Heat up the 1/2 jar of sauce you had left and when the peppers are done, spoon a little bit on each pepper.

Put some shredded cheese on top of the peppers if you like.

Depends on what you like in them! I would saute up the sausage with some onion and garlic, plus the chopped tops of the peppers. Add some salt and pepper and also some cooked white rice, if you like. If you want everything to hold together, you can add an egg or two Stuff the peppers, place in a baking dish, cover with foil and bake for about 40 minutes on 350F. You can also add some cheese, if you'd like!
