What seasonings should i add to my homemade apple sauce?

i know about sugar and cinnamon but what other ones should i add that would taste good?

A little nutmeg and allspice wouldn't be bad. Or just add a little Pumpkin Spice Seasoning, if you'd like to.
A small dash of cayenne? What do you like?

Instead of regular ground cinnamon, I like to use Red Hots or Cinnamon Imperials - those little red candies. They add the cinnamon flavor and most of the sugar (dependent upon the apples being used, sometimes I don't add any sugar) and they make the applesauce such a pretty shade of pink/red. You can change the color intensity and flavor based on how many red hots you put in after the apples are cooked. They melt as you stir them in and you can taste it with a spoon to see if you need more red hots or need sugar. Make sure you check it while it's still hot so you can adjust it, if needed, while the candies and/or sugar can still dissolve.

Actually, if you cook down the apples with water and salt (yes, salt) the natural sugar from the apples really works. A sprinkle of cinnamon after cooling is yummy.
