You are so cool for taking on such a feat and still trying to make it healthy and new. I can't give you a month's worth, but here's one that's kind of easy... and most kids seem to like it.
Boneless chicken breasts in Cheese sauce. My son calls it Cheesy Chicken...
Put 8 boneless/skinless chicken breasts in a baking pan.
Mix 2 cans of Cheddar cheese soup with 1 soup can of milk.
Pour over the chicken and bake it for an hour at 400
degrees. Serve it over white rice. If you want to sneak some vegetables in there, add some chopped broccoli or cauliflower into the soup mix. Serve it a green salad.
Forgot the dessert... but you can never go wrong with brownies. Or try mixing cool whip, cream cheese, cottage cheese and a small box of raspberry jello together. Add fresh or frozen raspberries if you like.

How about taco night? You could put all the fixings (such as shredded cheese, salsa, avacado, sour cream, shredded lettuce) on the side, so everyone just adds what they like.
You can make pizza on bagels or English muffins...my kids love those.
For dessert...jello with fruit added in..or take a graham cracker pie crust, bake it and when cool, fill it with softened icecream, and add a topping.

A simple meal is making meat sauce and pasta. However, you can put a spin on it by using, say, ground chicken and fresh basil along with the tomato sauce.
A good desert idea is to gently melt Nutella or a similar hazelnut spread over a double boiler and pour it over ice cream.

My "go to" easy recipes are always the same.
~Pasta with sauce (meat or regular).
~Make your own pizzas with Boboli crusts (everyone wins here because they make their own)
~BBQ chicken in the oven
I use chicken breasts (on the bone with skin, but boneless is fine too. They will just cook a bit faster). Spray a baking dish with Pam or similar. Top chicken with BBQ sauce and onions. Cover and bake at 350 until the juices run clear. Serve with buttered noodles and a veggie.
~Sherpherd's Pie (the really easy one!)
Brown some ground beef or chicken with onion until no longer pink. Pour into a baking dish. Top with creamed corn (2 cans) mixed with 1 can of regular drained corn. Top with instant mashed potatoes and cheddar cheese (if you like cheese). Bake at 350 until bubbly.
Desserts
Boxed brownies topped with ice cream is good and easy to make.
Ice cream pies are also great. You can use the following "basic guidelines" and go nuts!
I use a store bought crust (chocolate or graham cracker), the ice cream of your choice, crushed cookies or candy, sliced fruit, sundae toppings, cool whip to top.
Layer softened ice cream in the bottom of the crust and top with toppings of your choice. Freeze. Once firm, layer with more ice cream, cool whip and toppings to decorate. Freeze until firm and you're done!
Apple Crisp is great too....

Miami Lilly's suggestion of tacos is a winner! They're difficult to complain about because everyone can control what goes in them- you can buy diy packs in supermarkets- same deal with fajitas.
An easy pasta dish is pasta carbonara:
chop up approx 6 bacon rashers
4 tbs cream
1/2 cup parmesan (grated)
2 eggs
1 tbsp butter
Beat half the parmesan cheese into the eggs
saute the bacon in a fry pan til crosp, stir in the cream.
cook pasta according to directions on packet- drain, return to pan add the bacon and cream mixture- mix well. Stir in the egg and cheese mic until combined. season with pepper and salt. sprinkle with remaining cheese.
Another very easy pasta dish is marinara. It can be a bit hard on the wallet but it tastes good!
Cut up some onion, brown it in a saucepan, pour a can of diced tomatoes in on top, add some fresh basil leaves (or just dried basil if you don't have the fresh stuff) let it heat up. Throw in some chopped up fish (ask the people who sell it to you to give you a fish that will hold it's shape) let it cook in the suace for approx 5 mins, put in some mussels, cook for 1 minute put in some prawns and calamari allow them to cook for 2 mins and then add some scallops and cook for 1-2 mins. Take sauce off the heat and you're done! Pour it over the pasta and season as you like!
Fried rice is dead easy to make
You will need:
3 eggs lightly beaten
1 medium onion
4 spring (green) onions
250-350g ham
2 tbs peanut oil (if you don't have this that's okay)
300- 400g rice
1/4- 1/2 cup frozen peas
3 tbs soy sauce
250g small cooked prawns (still tastes good without these)
Cut everything (that can be cut) up into small pieces
Put some oil in a pan and pour in the eggs, tip the pan about so the eggs go thin and cover the whole pan, when the egg is almost set break it up into pieces- will prob resemble scrambled eggs- transfer to plate and set aside
Heat remaining oil in wok or high edged fry pan and stir fry the opnion over a hight heat until it looks a bit transparent, add the ham and stir fry for one minute, add the rice and peas, stir fry for 3 minutes until rice is heated through. Add the eggs, soy sauce, spring onions and prawns, heat through and serve.
Stir fry some veges to go with it and serve up any meat with it.

As for desert, the quickest I know (apart from icecream from a tub- hurrah!) sounds a bit weird but tastes really nice.
Get some very small bread rolls or slices of bread with crusts removed, slice up banana and put it on/in the bread, drizzle melted milk chocolate over the top.
a quick fudge:
12 oz. pkg. semisweet chocolate chips
14 oz. can sweetened condensed milk
Place chips and milk in microwave safe bowl. Microwave on medium power for 2-3 minutes, stirring after 2 minutes. Microwave, stirring at 1 minutes intervals, until chips are melted and mixture is smooth and thick.
Pour into greased 8" square pan and cool. You can also melt the chips and milk in a heavy saucepan over low heat.

INGREDIENTS
1 teaspoon butter
1 egg
2 tablespoons milk
1 slice Cheddar cheese
DIRECTIONS
Melt butter in a small skillet over medium heat. In a small bowl, whisk together egg and milk; pour into skillet. Cook until bubbles appear, then flip over. Cover with cheese. Cook 10 seconds, or until cheese is melted.

2 cups milk

Combine cornstarch and sugar in a medium microwave safe bowl. Gradually whisk in milk.
Microwave on High until thickened and boiling, about 5 to 7 minutes, stirring every 2 minutes. Gradually beat half the hot cornstarch mixture into the eggs, then stir eggs back into remaining cornstarch mixture.
Microwave on High until thickened and heated through, about 1 to 3 minutes, stirring every 45 seconds. Whisk in butter and vanilla. Serve warm.
INGREDIENTS
1 (12 inch) flour tortilla
2 tablespoons whipped cream cheese
3 slices ham
1 banana pepper, seeded and sliced
DIRECTIONS
Spread the cream cheese evenly onto one side of the tortilla. Lay the slices of ham over the top. Place the banana pepper slices in a straight line down the center of the tortilla. Roll up into a cylinder.
INGREDIENTS
4 ounces saltine crackers
1/2 cup butter
1 large head cauliflower, steamed
1 (12 fluid ounce) can evaporated milk
1 cup mayonnaise
1 cup shredded Cheddar cheese
DIRECTIONS
Preheat your oven's broiler.
Crumble salted crackers into a small bowl and mash them with butter until soft. Place steamed cauliflower into a 9x13 inch casserole dish.
In small saucepan, combine milk and mayonnaise with wire whisk. Bring the mixture to a boil; boil for 1 minute. Remove the pan from the heat and stir in cheese until melted. Pour this sauce over the cauliflower. Crumble the butter and cracker mixture over the cheese and cauliflower.
Place the casserole into the preheated oven and broil until golden brown.
