rub the meat with a rub of garlic powder, onion powder, red pepper flakes, pepper, and kosher salt. Try to let stand or marinade in the fridge for a couple hours.
Pull meat out of the fridge to come to room temp so it will cook evenly.
Have a barbeque big enough to accommodate two sections...one for the coals/fire, and one for the meat.
Fire up the coals/fire and cover til temp is about 250-300F
Place meat in the non-heat section. smoke it for about 1-2 hours, until the meat pulls gently from the bone.
Finally, place meat on the coal/fire side to brown/sear it. You would add sauce at this time, if you want sauce on your ribs. When browned to your liking, remove meat and let set for 5 minutes before serving.
IF your BBQ is not big enough to smoke the ribs, you can cook them in a roasting pan for 1-2 hours at 300F. Then drain and put them on the BBQ til brown/seared to your liking.

Rub the ribs with spices.
If you don't have a favorite rub, you can buy Montreal Rub in many supermarkets. Or mix your own with 6 parts kosher salt,
6 parts Hungarian paprika, 2 parts garlic powder (not garlic salt) and 1 part cayenne pepper.
Smoke or bake the ribs.
If you're doing this in a BBQ smoker, that's easy. If you're using a regular charcoal or gas grill, the idea is to put the fire on one side of the grill, and put the meat on the other side. If you want, you can soak hardwood - perhaps mesquite? - and put it above the fire. That will give smoke from the hardwood without it actually burning. In any case, cover the grill so that the hot smoke cooks the ribs. The idea is "low and slow".
If you're doing this in an oven, stick the ribs in a roasting pan, cover it, and bake the ribs low and slow.
Douse the ribs with BBQ sauce.
Shouldn't you do this when the ribs are still cooking? No, because a major ingredient of BBQ sauce is sugar, and it will first turn into caramel, then immediately turn into carbon. Carbon-coated ribs are NOT tasty. But as soon as the ribs are done. it's OK to douse them with your favorite sauce.
There are a million recipes for BBQ sauce, and I'm not going to tell you which one to use. If you're lazy, and want to buy sauce, Kraft BBQ sauce is *definitely* not the best, but it's far from the worst. I know, because I've eaten ribs at places that used far poorer sauces.
And if all else fails, drive to Ottawa Ohio, and go to the Red Pig. It's been ten years since I've been there, maybe fifteen, but they used to have the best ribs in Ohio, perhaps in the entire Great Lakes region. And that's saying a lot, because Damon's is headquartered in Columbus.

Beef - Boil them in Pineapple juice for two hours. Then cover with your favorite BBQ Sauce (I like KC Masterpiece) and bake at 350 for another two hours. Be careful - the meat falls off the bone. It's a good thing but not when it gets all over your white t-shirt.
Pork - Sprinkle with season salt on both sides... Mix white vinegar and vegetable oil 1/2 & 1/2 in a spray bottle. Put the ribs on a medium heat BBQ grill and spray with the mix. Turn every 20 mintues and spray again. When the inside embrane starts to pull away from the bone, splash your favorite BBQ sauce (mine is still KC Masterpeice) on them and cook til the sauce loses the "wet" look.
These work for me, but some of those other suggestions sound really good too.

4 lbs spareribs, Cut To Serve
1 cup brown sugar, Firmly Packed
1/4 cup tomato ketchup
1/4 cup soy sauce
1 teaspoon dry mustard
1/2 cup chilli sauce
1/4 cup dark rum
1/4 cup Worcestershire sauce
2 cloves garlic, Crushed
1 dash pepper
Cooking
1. Wrap ribs in double thickness of foil and bake for 2 hours at 300 degrees F.
2. Unwrap and drain drippings.
3. Combine all ingredients and pour over ribs.
4. Marinate at room temperature for 1 hour.
5. Bake at 350 degrees 30 minutes, basting with sauce, or grill 30 minutes, 4 inches above coals turning and basting.

You can use a dry rub or a marinade. leave overnight either way. hot coals and put the ribs on the rack

First boil for 3 hours* or till tender...then spred bbq sauce on them bake at 325 for 25 min.!!!I'ts the best tender and juicy!
