Just leave the vanilla extract out of the recipe you have.

You can just do a Yahoo! search for "chocolate chip cookie recipe" and find one that you like. Most do include vanilla extract but it's only there for flavor. Following the recipe but not using the vanilla extract won't have any effect on how the cookies turn out so no worries!

If you have peppermint extract, use half as much as the recipe calls for the vanilla...makes it choc mint! Or just leave the vanilla out. They won't be quite as flavorful, but they'll still be fresh baked cookies.
