when making sushi, i need sushi vinegar right?

is sushi vinegar the same with rice vinegar?

and how to make a very good sushi rice?

please help me...im just a begginer

dont boil it. steam it.

when the rice is done add a little bit of rise wine vinegar.

the rest rice.

p.s. dont put too much vinegar. just a bit.

3 cups Japanese-style rice
3 1/4 cups water
1/3 cup rice wine vinegar
3 tbsp sugar
1 tsp salt
PREPARATION:
After washing the rice well, cook it by pan or rice cooker. See how to cook Japanese rice. Prepare sushi vinegar (sushi-zu) by mixing rice vinegar, sugar, and salt in a small pan.

Put the pan on low heat and heat until the sugar dissolves. Cool the vinegar mixture.
Spread the hot steamed rice into a large plate (if you have it, use a wooden bowl called sushi-oke) by shamoji (spatula). Sprinkle the vinegar mixture over the rice and fold the rice by shamoji very quickly. Be careful not to smash the rice.
To cool and remove the moisture of the rice well, use a fan as you mix sushi rice. This will give sushi rice a shiny look. It's best to use sushi rice right away.

How to make sushi rice

Makes enough rice for 8 rolls

2 cups short-grain Japanese sushi rice
2 cups water
1/2 cup rice wine vinegar
2 Tbsp mirin (Japanese sweet sake)
1/4 cup sugar
2 tsp salt

Rice cooker method

Place rice in a fine sieve and rinse thoroughly until the water runs competely clean. Drain well.
Place rice and water into the rice cooker, turn it on, and wait for rice to cook. Proceed to the Finishing Rice section.
Oven method

Preheat the oven to 375F.
Place rice in a fine sieve and rinse thoroughly until the water runs completely clean. Drain well and put into an 8x8 Pyrex dish.
Bring 2 cups water to a boil.
Pour boiling water over rice and cover the Pyrex dish tightly with foil. Place in the middle of the oven for 20 minutes. Proceed to the Finishing Rice section.
Finishing rice

Allow rice to rest covered for 20 minutes.
Combine the vinegar, mirin, sugar, and salt in a small non-reactive saucepan and set over medium heat until the mixture is hot and sugar dissolves. Do not allow it to boil.
If using a rice cooker, invert rice into a large stainless steel or wooden bowl. If using a Pyrex dish, you can finish rice, right in it.
Fold half of the vinegar mixture into rice with a rubber spatula or a wooden spoon. Taste the rice. It should have a pleasantly sweet-acidic edge. If necessary, fold in more vinegar mixture.
Wet a dish towel (or 2 layers of paper towel) and cover the rice. Let it rest for 20 minutes to develop flavor. Keep rice covered while shaping your rolls.

Buy a rice cooker and steam your rice. (10 dollars at walmart) You'll also have to add about 1/3 cup of rice wine vinegar to about 3 cups of rice. 3 tsbp's of sugar is also needed and a pinch of salt. Heat up the vinegar, sugar and salt in a saucepan until the sugar is melted. Then fold this mixture into your rice slowly without crushing it. Then let it sit for a bit and voila!

Oh, you'll also need Japanese style rice. I'd go for Jasmine rice.

Go to the ethnic section of your local grocery store and look for "sushi rice" . It's not the same as regualr rice it's more gleutenous (stickier).
