Will it be pink at all or completely grey/brown? It's my first pot roast!

If the crock pot is on high, it's done.

If the crock pot is set on low, give it another hour or two.

The meat technically would be done when a thermometer reads greather than 160F, but pot roast is usually made from less tender cuts of meat and you want the heat and liquid to help tenderize the meat even more and shreds easily with a fork.

All the pink will be gone, and the meat will fall apart when you try to pull it out. Then it's done.

Pot roast is best with gravy, but that doesn't have to add any fat. To make gravy from the liquid the meat has boiled in, take some of the water (2 cups or so, depending on how much gravy you want) and put it in a small pan on the stove. Turn it on medium-low heat. Stir in a couple tablespoons of flour. Stir until smooth. A whisk works great for this. Taste a little and see if you need to add salt, pepper, onion or garlic. If it just tastes a little dull, add all 4! Powders are fine. Use about a teaspoon of salt and a sprinkling (sprinkle just enough to lightly cover the surface of your gravy before you stir it in) of all the others. Heat to boiling, stirring frequently, and remove from heat.

I brown my roast in oil before cooking roast in crock pot--yes, 5 hrs on high would be long enough--just test with fork after about 3 hours and see if tender--go from there.

I brown roast--put little water, onion and celery in crock pot. Add some Wylers beef granules. Add roast and cook on high 3-5 hours. On low 6-8.

If you are going to be away from crock pot---cook on low, or turn down to low when you leave the house.

What heat setting are you using? If at high, it is probably done by now. If set at low, it should cook at least 8 hours.

You can tell the roast is done when the meat is tender and it falls apart easily.

I cook mine until the meat is falling apart when you try to get it out. Some people perfer it a little chunkier. Depending on the size you should be getting close.
Good luck!
