We don't really have any traditions, just whatever we feel like. We're making corned beef brisket right now in the crockpot, and mashed potatoes and gravy, and a pasta salad. It's too hot to even think of grilling today!

Corned Beef.
Add corned beef to boiling water, to cover.
Add a little vinegar, an onion, and a little pickling spices & pepper corns. (optional).
Simmer for 30 minutes per 500gm (lb)
Let rest for 20% of the cooking time and carve across the grain.
