How can I prepare leftovers to make them new?

I think it is mainly concerning meat (Chicken and Beef) meals, and vegetables. How can I prepare them or mix them together to make it a new dish served?

I could help more if I knew what the leftovers ARE....
Most roasted meats can be re-used in a casserole, with a gravy or cream based soup, a starch like potatoes, rice or noodles, and maybe a veggie, like peas or broccoli. You can also make enchiladas or burritoes.

Some meat can be made into soups or stews, veggies can go into soup or stews, rice can be made into pudding, spanish rice, or fried rice. Leftover potatoes are good fried.
Thinks like taco meat makes good nachos, and chicken can be made into tacos or chicken salad.

Many leftovers make great "Whatnot Casserole," "Whatsit Pie" or "Whatchagot Stew."

"Whatnot Casserole"
Heat oven to 350 degrees Fahrenheit
Liberally spray a 9" square pan with non-stick pan spray.
Into this pan, chop leftover meat and veggies into bite-sized pieces. Lightly sprinkle with onion powder and garlic powder. Add 1/4 cup water or broth. Top with grated cheese. Bake 30 min or until hot and bubbly. (Can be done in a 9"x13" pan for more people. If so, use 1/3 to 1/2 cup water or broth.)

"Whatsit Pie"
Prepare as above, but top with mashed potatoes instead of cheese. Cheese may be mixed in before spreading with mashed potatoes, if you like. Bake as above.

"Whatchagot Stew"
Toss chopped leftover meat, potatoes, and veggies into a large pot. Cover with water. Add a can of red kidney beans, unless kidney beans is one of the leftover ingredients, of course. Chop half a small onion and add that. Add a spoon of crushed or minced garlic, or a teaspoon of garlic powder. Stir 1/3 cup flour into 1-2 cups water until there are no lumps left. Stir this into the stew to help thicken it. Let stew simmer and bubble (add more water if needs be) over low heat for at least an hour. This stew is also great in a slow cooker. Serve with hot biscuits.

Whenever i have letover meat and vegetables, i make fried rice. Take the meat and vegetables and stir fry in oil and soy sauce with garlic, then add the steamed rice and stirfry all together!

If I knew what you had left over I might come up with something better.
Meat, fish or chicken.
Vegetables fried up make a chow mien.
