Probably sounds crazy, but I did this a few days ago and it was soooooo simple, you have to try this: I took 5 ears of corn on the cob, cleaned them, tore everything off. Then I wrapped each one with a wet, wrung out paper towel. I put them in the microwave for 9 minutes on high(my microwave is old, you may want to take it down to 7 minutes). Voila!!! Yummy corn on the cob!!! I couldn't tell it was cooked in our microwave.

I put cleaned, husked corn in boiling water, return to boil and cook three minutes if the corn is fresh, or five minutes if it has been refrigerated. Then I turn off the heat and cover the pot and let the corn finish cooking in the hot water for 10 minutes. I use tongs to remove the corn and place it on a warmed platter and serve.

I save the corn water for stewing chicken for chicken corn soup. Strain if necessary to remove any corn silk that has remained in the water.

To do it on the grill, clean the corn of silk without tearing off the husk. (Just fold the husk down temporarily. Remove the silk and bring the husk back up around the corn.) Then soak it in cold water for at least an hour. Tie a soaked string around the corn, if necessary, to keep the husk around the corn. Put the corn on the grill and cook for about 15-20 minutes, turning about every five minutes. The husk will start to scorch by the time the corn is done, this is ok, and don't worry if the string begins to burn, just remove it, its done its job. The husk will practically fall off the corn when done.

Cheese on the Cob

1/2 cup mayonnaise
5 ears corn, husks and silk removed
1 cup shredded Parmesan
Chili powder
1 teaspoon salt
1 teaspoon freshly ground black pepper

Prepare grill.
Brush a thin layer of mayonnaise on corn.
Sprinkle the corn with cheese, chili powder, salt and pepper. Wrap each corn with foil and place on the grill.
Turn occasionally and cook for about 10 minutes (until kernels begin to brown).
Serve warm.


Corn on the Cob with Roasted Red Bell Pepper Butter

Roasted Red Bell Pepper Butter:
1 red bell pepper
1 pound salted butter, at room temperature
1/4 cup basil leaves
2 tablespoons lemon juice
1/2 teaspoon freshly ground pepper
Corn:
4 ears corn, husked

Roast the red peppers whole over a gas or charcoal flame, or under a broiler, turning every few minutes until entirely blackened.
Immediately place in a paper bag.
Seal bag and let sit for 3 minutes.
Peel off the charred skin and discard.
Slice the peeled peppers open and discard the membranes and seeds.
In a food processor, puree the bell peppers, butter, basil, lemon juice, and pepper.

Transfer to a loaf pan that is lined with plastic wrap. Refrigerate for approximately 1 hour, or until butter hardens. To serve, remove from plastic wrap.
Use leftover butter on fish, veggies, bread, etc.

In a large pot, bring 8 cups of water to a boil.
Add corn and boil for 6 minutes.
Serve with roasted red bell pepper butter.

There are 2 ways how I cook corn.

1) I put the corn on the grill and wait till it's done. Then I stick a chopstick on it and spread butter all over it.

2) I boil it

If you would like perfect corn on the cob, bring a large pot of water to a rolling boil, place your corn in husks off, set timer for 5 minutes, and remove and eat...perfect every time!

I shuck the corn and add it to a large pot of boiling water on high. Once the corn is all in and water is still boiling, I turn it down to medium and add two tablespoons of sugar to the mix. About ten minutes later, it's ready to serve. Coat generously with butter and salt if desired.

You don't really cook it, use just heat eat.
Into boiling water add tablespoon sugar, tablespoon salt and boilcorn for 5-10 minutes.
Slap on that butter and O Boy you go a great summer treat.

For a crowd, in a large pot of boiling water, 12 to 15 min. at boil; a few ears, in the microwave in a shallow dish with a little water, covered with saran wrap, or on the grill in foil with butter.

Shuck corn.

Big pot.

Rapid boil of well-salted water.

Add corn. Cover and boil no more than 5 minutes.

Shut off heat. do not remove cover. wait 5 minutes.

Drain. Serve.

Boil it until soft, and then put in on the bbq until it's light brown. Then slather with garlic butter. Mmmm. Now I want Corn..hehe
