These terms are relative, depending on which part of the country you are in.
I once got some "hot" chili in Chicago, and got some insipid stuff that looked and tasted like red Elmer's glue.
In New Mexico and Arizona, I have seen tourists turn bright red and almost choke on "mild" chili.
In New Mexico and Arizona terms, I like chili a little on the fiery side of "hot".

Hot. Suicidal tends to have a less of an enjoyable effect on me. I like sauces like Franks Red Hot or Tabasco. But too hot is exactly that too hot. Too mild is beans tomatoes and beef. Weak.
