You know how I love them? Melt a little butter and some olive oil in a pan, add some chopped garlic and a pinch of crushed red pepper flakes ans saute until the garlic is softened. Add broccoli that has been chopped and some cherry tomatoes that have been cut in half and saute until broccoli is bite tender. Toss with hot pasta and sprinkle on some freshly grated parmesan! omg! It's wonderful! I grow my own tomatoes, too, so I know what it's like!

I too have lots of cherry tomatoes. One of the things I like to do with them is cut them in half and put them on a baking sheet along with some basil (fresh or dried) or some dried Italian seasoning, minced garlic and salt to taste. I drizzle some olive oil over the top and stir to distribute the olive oil. I roast them in a 350 degree oven until thoroughly cooked and lightly browned. The are really delicious tossed with penne or other small pasta shape.

Enjoy!

Chop them in half or puree them. Mix them with browned mince and tomato paste, oil and water. You can have this as a meal on it own or use it as a topping to spaghetti.

You could also add the cherry tomatoes to a pasta sauce for more of an authentic tomato taste.

Now i'm getting hungry :)

I found some great sites with cherry tommy recipe's for you.

I found a couple of great tuna recipes i found, that are great with cherry tommies (we call tomatoes tommies in Oz :)

There are also sausage, chutney, another spaghetti and chesse recipe.

Have fun experimenting.

Oven-Dried Tomatoes

3 tablespoons chopped basil
2 tablespoons chopped oregano
2 cloves garlic, minced

salt and pepper

Pre-heat the oven to 225° F.

Cut the tomatoes in half, add fresh garlic, olive oil, basil, oregano and salt and pepper to taste.

Spread them out on a parchment-lined cookie sheet and place in the oven.

Bake for one hour, then turn off the oven and allow the tomatoes to sit overnight in the warmth of the oven.

If your tomatoes are large enough to fill, that's great. Core out centers with a melon baller and fill with cream cheese, softened and mixed with a bit of mayo, chives and salad shrimp. Delish. Or use Tuna mixed as you would for a sandwich, then fill.

If you don't want to do all that, just add them to your oven veggies and roast.

Cherry toms in salads are great, esp with a vinaigrette.. :O)

You can use them as you would use regular toms. I Do like to use them in stews, curries and for juice because they tend to be sweet (yummy!).
