Of course, that is the best part! Try season it with some scented olive oil and oregano and putting it for a couple seconds under the broiler. Yum!

I used to like the rind until I ordered it at a restaurant and it tasted like the refrigerator! They must not have wrapped it too well. I still have it at home sometimes, but I can't bring myself to eat that part.
