Flake it up and add an egg, some breadcrumbs, lemon juice, hot sauce, onion,salt and pepper and form into patties. Dredge in more breadcrumbs and fry in some oil (like burgers). Serve alone or on a bun with some tartar sauce. I've done this a million times and it is really good, I promise!!!

I'm assuming the two leftover salmon filets are already cooked. If so, mash them up, put diced (white or yellow) onions with it, black pepper and mayonnaise and make it like tuna fish salad mix - you can add diced celery to it also. Put it inside two pieces of bread and grill it on both sides. My hubby loves it. Or, serve it as a scoop on top of a bed of salad fixings with the grape tomatoes around the side and cucumber pieces around the side. He likes that too.
You could also use it in making a tuna noodle casserole but with the salmon instead. If you need the recipe for that - here it is:
Your cooked salmon - broken into pieces
Egg noodles (cooked and drained)
1 can condensed cream of mushroom soup
1 can mushrooms - drained
1 hard boiled egg - peeled and chopped
1/2 medium onion - sauteed in butter until translucent
green peas - frozen ones that are thawed or fresh ones that are slightly cooked
Saute the onions, add the condensed soup - no water - to the onions. Add the mushrooms, noodles egg and peas and mix. Then add the salmon and mix it in gently. Place in a casserole dish that is oven safe and top with bread crumbs and little pieces of butter on top of that. Bake in a 350º oven for 20 minutes or until it bubbles and serve. Very good.

Go to a recipe web-site and type in "salmon recipe." That should give you lots of options. First thing that comes to my mind is salmon patties. I don't like fish, but my late husband loved salmon patties, poached salmon, etc.
Another idea might be to make a sauce for it, and serve it over rice? I don't know, I still say try a recipe web-site. Happy cooking!

here's a good idea, make some rice, and add black eye peas, and dried dill weed to the rice, then put it in a pot, and cover with a paper towel and the lid. after a while, if it is ready, serve some rice, put the fish over it, add some lemon and tabasco hot sauce on the fish it'll be great. i'm not sure that i explained the rice right . make the rice like you would regularly, then, put some in the pot, add the black eye pea and dried dill weed mixture on it, add more rice, and more mixture, until its all done, cover with a paper towel, and put the lid on, it should take about 1-1/2 hours.yea, that should be right.
i know a "salad" thing to eat with, but you might not like it idk. diced up cucumbers, diced up tomato, dried mint, salt, pepper, and add some lemon juice and vinegar, to cover all of the dry materials, and eat with the salmon and rice, you could also try yogurt instead of the "salad".

spread some cream cheese on a tortilla sprinkle some dill on it then crumble your salmon on...cover with another tortilla with cream cheese and put on your grill or put butter in saute pan and cook till tortilla is crispy on each side!
