they are too high and make it harder to play, but there are so many screws I don't know where to begin

there could be 2 reasons they are too high.
1: the neck is bent too far
or
2: you have too much tilt at the bottom where the strings are threaded though

if you dont know what you're doing don't mess with it cause you could make it worse. I advise you take it in to a professional.

You turn the screws (or hex heads) that point up counterclockwise. If there are 2 for each string, turn them both so that the saddle stays level. Loosen the strings first. You'll see the saddle go down. It the string buzzes when you tune back up - you went too far - loosen the string and raise the saddle back up.
Another factor is the neck truss rod - if a simple adjustment to the string saddles doesn't help then a pro should look at the neck adjustment.

It's called the 'Action' - the distance between the fretboard and the strings. I know exactly what you mean, and I've had mine lowered. If you have an acoustic, you need to remove the strings and shave down the saddle so the strings will be lower. If you have an electric, it actually depends on which one. Personally I have an SG and it's really easy to lower just by getting a screwdriver and lowering the saddle.

It depends on the brand and model of the guitar, but the ones that have an adjustable rod in the neck usually have a plate at the top end between the string posts and when you you take the 3-4 screws from the corner of the plate off, there is a nut on a shaft in there. If it is not adjustable, then you have to buy a new guitar or start filing on the bridges (risky)
