I often use broth (chicken or vegetable) instead of water when I'm cooking rice. If you don't have a can of broth on hand, you can make the broth from bouillon granules or cubes. And are you familiar with Indian spices? I often put a little bit of curry powder, garam masala, and/or saffron into the broth before I add the rice. Then I cook it as usual, but in the last 5 minutes before the rice is done, I'll put in some frozen baby peas, some toasted slivered almonds, and (if I have it) some chopped cooked chicken breast, either left over from another meal or bought from a deli. It's a main dish (not very elegant, but tasty and easy) that comes together quickly and is a little more interesting than plain white rice. Serve with some sliced fresh fruit, watermelon maybe.
If Indian flavors don't appeal to you, you could do a Latin-inspired version using chicken, bell pepper, cumin and coriander--maybe a little chopped cilantro at the end. Or a Chinese-inspired version with chicken, water chestnuts, soy sauce, sesame oil, and some kind of greens--watercress? cilantro?--added at the last minute.
I don't know if any of these ideas will win a prize for haute cuisine, but they should help make your white rice a little more interesting. It's not easy planning meals and cooking for a picky younger sibling--you deserve a pat on the back.

first saute some onions and garlic in some olive oil, then add the rice and let this brown. Add your chicken stock but to help it cook faster, heat the chicken broth first. Add this a cup at a time. When the rice is almost done stir in some heavy creme. This will make it creamy, top with some parmesan cheese and you actually have a risotto dish. You can also chop up veggies as well and add, I like to add carrots, tomatoe and celery. Plus they give it some really good flavor.
Another way that I do is start it the same except use 1/2 lime juice and 1/2 chicken broth. When the rice is done stir in some cilantro. You have easy lime cilantro rice.

Super Simple Sweet and Sour Chicken With Rice
4-6 boneless skinless chicken breasts
1 (10 ounce) jar sweet and sour sauce
1 (15 ounce) can pineapple tidbits
1 large bell pepper, chunked (I use a mixture of red and green peppers)
1/2 medium onion, thinly sliced
1 (15 ounce) can chicken broth
1 1/2 cups uncooked rice
Place uncooked rice in 9 x 13 glass baking dish.
Top with uncooked chicken breasts.
Drain juice from pineapple into a bowl. Add the sweet and sour sauce and chicken broth. Mix to lightly to blend.
Scatter peppers, onions and pineapple chunks over the chicken.
Pour sweet and sour mixture over all.
Cover tightly with aluminum foil and bake at 350 degrees for 1 hour. Remove foil in last 15 minutes of cooking.

Try frying it with some scrambled eggs and little veggie bits for easy fried rice.
Mix in some canned beans that come with sauce, like chili beans.
Look around the grocery store in the asian section for different sauces to try.

Salt, Pepper & Granulated Garlic, Chopped Onion......Flavored stock instead of water..............
I always make mine in the oven for perfect rice everytime!! 20-30 minutes @350 degrees!!

Put some garlic in it like 2 cloves and it will taste like garlic rice and you can put some food coloring in it and make blue, yellow, pink, etc. rice

You can add small pieces of carrots, peas, corns and make a sauce of fresh tomato with onion, garlic, olive oil, olives, oregano and fresh pepper.

Use either chicken or beef boullion, dependent upon what you've having with it. Add parsley, paprika and oregano or sage or thyme - also dependent upon what else you're having.
