Whole grain implies that the wheat germ, bran, as well as the kernel was used... such as whole wheat flour.

Most pasta is not whole grain unless it's made from whole wheat.

Durum is a type of wheat (just like apples... there are many types of apples - granny smith, fuji, red delicious. Wheat is the general name while Durum is specific types of wheat). Durum is high in protiens such as gluten which is why it is used in pasta. Gluten gives structure and elasticity to the pasta.

Semolina is a coarse grind of wheat, like corn meal. Typically, semolina is made from durum wheat.
