I am a Jesusonian (made in Spirit an "I am of I AM") and this personality being of me can never be changed. I do not practice organized Christianity in church under the spiritual leadership of any human minister or pastor. Jesus Christ and I are eternally Related to each other at all times and all places.
Never can you change He Who IS your and our Sovereign Creator Father God ! Some day, more human sons fo God here will realize that more profoundly !
There are TWO Persons you can never run away from:
God and yourSelf (the God-made spiritual, eternal You in Jesus)
Theological note for any Christian Theologians or spiritual seekers: On the above, realize that JESUS IS I AM to us in Jesus' universe that He has made and is still Creating, Controlling and perfectly Upholding. The Paradise Father-Infinite I AM is another Deity Person. How can this be and Jesus be I AM here to us also ? (some would ask me) The Father-Infinite I AM on Paradise does as He wills; and He can and does transmit (project) His I AM Personality into any of his perfect Coordinate Creator Sons Who Are now also Master Sons with the full Deity Presence of God as Father and Son and Spirit now within Themselves for functioning in their own space-time Created (by Them) local universe. Our human personalities are also "I am of I AM" transmitted Personality ! Or, your could Theo-Ontologically state: I am of I AM (infinite) as I AM (Jesus Christ) now here. I grew up in an orthodox Jewish home.
I was always taught that Jesus was a liar, a blasphemer, a deceiver, and possibly simply a lunatic, that is, insane.
It wasn't until I had an actual encounter with Jesus that I had to change my opinions.
To me, following Jesus is not an option. Jesus has since proven Himself to be the Messiah from God, the anointed Son of God, that is to say, God manifest in flesh. The Word of God, which IS God, which came down and fully inhabited a human body.
The Hebrew name for the Messiah is Yeshua, or Joshua, but since the New Testament was written in Greek, it was translated to Jesus. By any other name, He is who He is.

Probably Wicca or Buddhism. The philosophy of Buddhism has always fascinated me, and the way Wiccans hold the Earth and all living creatures as sacred also appeals to me.

Your question is so sweetly phrased! First, Adam and Even believed in Jesus and He became their greatest hope after they sinned. (Genesis 3:8-15) Second, the word "Protestant," and the rationality you describe, comes from the Catholic point of view. Basic Christianity, from "our" point of view, began right there in the Garden of Eden with the friendship of the first family with their Creator, and then, after sin came in, with the hope that "the seed of the woman" would "bruise" "the head" of "the serpent." (Genesis 3) From "our" point of view, Christianaity became political three hundred years After Christ ascended back to heaven, with the emperor Constantine's conversion and subsequent "altering" of the Ten Commandments. We see "Protestant" belief as a return to Biblical teachings without the overlay of tradition called "Catholic." I doubt that anyone ever seriously saw Henry VIII as a spiritual leader. Or felt that religious life was improved by persecuting whoever translated, owned or distributed basic scripture. An interesting history of the post-apostolic Christian era is "The Great Controversy." I found it online and readable at the first link below, or you can just listen to it at the second link. Jesus' "pre-advent" role in history can be seen in "Patriarchs and Prophets," or the first chapter of "The Desire of Ages." I'm with you, I don't understand why He took so long to "arrive" the first time, either. Seems like He's taking plenty long enough the second time, too!

In a lot of places Christianity is not an option, but they go underground to prevent other people from killing them for their beliefs. If it's wasn't an option here, I'd do it too.

Simple, I'd do what people who wanted to walk with the living God did before the advent of the Israelite nation and subsequent Old Testament commandments with its sacrificial system - I'd admit to my Creator that I exist in a sinful state and cannot justify myself before Him. I'd ask Him to help me walk with faith in Him and His ability to justify me out of my faith and attempted repentful heart.

I would have to say the Jewish religion would be my only other choice. They at least believe in the same God Yahweh and still follow most of His teachings.

Easy. I'd be Jewish. Why? Because God revealed himself to the Jews and they were his chosen people. So if Christianity did not exist, that meant that Jesus had not come and we'd need to follow the Jewish laws and customs to have a relationship with God.
