Actually, since not too many donut shops are staying open 24hours nowadays, you're more likely to find an officer at a convenience store or restaurant that:
A) is [of course] open 24 hours
B) serves coffee [odds are free coffee per management, just so any bad guys can see a cop inside and therefor will not go in to hold up the place]
C) has someone there to talk with to help stay awake [especially between 0400hrs and 0600hrs].

Because they are open 24/7. There is a natural camaraderie between people that work graveyard shifts. You'll also find cops late at night in convenience stores, gas stations and diners. Their presence or just the possibility of their arriving unexpectedly at any time, offers a degree of protection to these business establishments which is usually greatly appreciated (hence the free donuts).
This doesn't happen nearly as much with the cops who work the first shift.

This stereotype began when cops frequent donut places during the graveyard shift, because donut shops were the only places open that late.

While I am as far from being a cop supporter as you can get, I have to defend them on this one. It really is a old cliche' and doesn't happen that often. Most of the cops I know would afford parking close to a donut shop, just to avoid the jokes.
