Black is the most widely used but it has many other ways of eating . Smoked is very popular. But it really depends on what kind of Sturgeon you are talking about there are several different kinds from eastern Europe or the middle east. Or the American river Sturgeons which has several more Varieties. They all produce cavier but qualities very greatly. There are many different preparations for serving these too.
