Rustic Fresh Blueberry Peach Tart
Ingredients
1 cup flour
6 tbsp sugar
¼ tsp salt
6 tbsp very cold butter
3 tbsp ice cold water
1 cup blueberries
1 cup peeled, sliced peaches
Directions
Preheat the oven to 400°F.
Place the flour, 2 tbsp of the sugar, salt and butter in a food processor fitted with blade attachment.
Process the mixture until the butter is the size of small peas.
With the motor running, add the water and process for 15 seconds.
Turn the crumbly dough onto a work surface and form it into a disc. Chill for several hours.
Roll the dough out to a 9" or 10" shell.
Put the dough on a baking sheet and pile the blueberries and peaches toward the center. Sprinkle the fruit with the remaining sugar.
Gently fold the edges of the dough to contain the fruit.
Bake until the crust is lightly golden, about 20 to 30 minutes.

Fresh Peach Dessert
This dessert is sooooo fabulous! It is so fresh tasting that you will have a hard time stopping at just one serving!
Note: It is important to note that the pudding used is the cooking kind, NOT the instant. This makes a 9 x 13 size dessert, but you could also put it in 2 pie crusts, or half the recipe for one smaller dessert. Enjoy!
15 servings
2½ hours 30 min prep
Bottom Crust
18 graham cracker squares (1 package)
4 tablespoons butter, melted
2 tablespoons sugar
Dessert
1 (6 ounce) package vanilla pudding mix (the kind you cook)
1 (6 ounce) package jello peach gelatin
4 cups water
1 1/2 cups whipped topping (cool whip)
3 cups peaches, sliced
In a medium sauce pan, combine dry pudding mix, jello powder and water.
Stir and heat to a boil. Let it boil for one minute.
Pour mixture into a bowl and place in the fridge to cool and thicken for about a hour.
Peel and cut up peaches (or fruit of choice) and set aside.
Remove cooled jello from the fridge and fold in the cool whip topping. Next fold in fresh fruit. Place back in fridge.
Prepare grahm cracker crust in a food processor or blender, adding all 3 ingredients.
Place crust in the bottom of a 9 x 13 dish or in 2 pie dishes and press down firmly.
Remove jello mixure and pour into the crust. Place back in fridge to continue firming up, about another hour.
Serve with whipped topping.

Hey Breezer! Here's a Paula Deen recipe for peach cobbler that is SO EASY, and especially good when served with vanilla ice cream - you won't go wrong with this one!
1 stick of butter
1 cup sugar
1/4 cup self-rising flour
3/4 cup milk
1 28-ounce can sliced peaches in syrup, undrained (or I have used peach pie filling as a substitute)*
* You can use fresh peaches as well. Simply clean and peel the fruit, mix with 1 cup sugar and 1 cup of water in a saucepan. Bring to a boil and simmer for 10 minutes - and voila! Just be sure to stir often.....
Preheat oven to 350 degrees. Put butter in deep baking dish (I use a 2 quart) and place in oven to melt. Mix sugar, flour, and add the milk slowly to prevent lumping. Pour over melted butter. DO NOT STIR! Spoon fruit over the top, gently pouring in the syrup. STILL DO NOT STIR! Batter will rise during baking.
Bake for 30-45 minutes. Serve warm with whipped cream or vanilla ice cream.

******PEACH COBBLER PIE
1 package of pre-rolled pie crust
1 1/2 cans of sliced Freestone peaches
cinnamon-just a little
sugar
butter
nutmeg (pinch)
This is one easy peach cobbler that can be made with a store-bought crust and canned peaches.
Preheat oven to 350. Move the bottom crust into an 8 in square pan, pinch and shape into place. Put in peaches and juice from 1 can (more if you like), add pats of butter, sprinkle with sugar, cinnamon, and just a pinch of nutmeg.
Top with a prepared purchased top crust, pinch and shape over bottom crust to seal. Cut slits and sprinkle lightly with sugar if desired.
Put in 350 oven and bake until brown and bubbly top and bottom.
