I don't eat at McDonalds, however, hash browns typically are shredded potatoes. I cook from scratch, so what is frozen in the grocery store, again I would assume would be the same but with additives added for freshness.

They are potatoes that have been grated and frozen. Like on a box grater.
When you fry a clump of the potatoes in oil and keep flipping and pressing them it makes a little cake. You fry it and press it the same way you would bubble and squeek.
You can buy a precooked frozen cake of hashbrown potatoes as well.

Hash browns or hashed browns are a simple potato preparation in which potato pieces are pan-fried after being diced, riced, shredded, or julienned.
I usually use the loose cubed style or loose shredded, but they are available in 'cake form' as well.
As a bonus, here is a recipe featuring said hash browns - recipe affectionately known as "funeral potatoes" as it is an easy dish that you will find at a lot of gatherings, including funerals . . . but also weddings, birthday parties
INGREDIENTS:
2-lb pkg of frozen hash browns
1/4 cup diced onion
1 can (10 ¾ oz.) condense cream of chicken soup
1/2 soup can milk
1 cup sour cream
salt and pepper to taste
3/4 cup crumbs*
3 tablespoons butter, melted
1 cup sharp cheddar cheese, grated
PREPARATION:
Heat oven to 350 deg F.
Thaw frozen potatoes.
Place potatoes in a greased 2-3 quart casserole dish or a 9x13 cake pan.
Saute onion in 1T of the butter and spread over potatoes.
Combine soup, milk, sour cream and salt and pepper to taste. For a creamier dish, add 2-3 tablespoons additional milk. Mix well. Spread sauce over potato/onion mixture.
Melt butter and combine with crumbs. Sprinkle crumbs over mixture.
Sprinkle cheese over mixture.
Bake uncovered at 325 deg F for 40 minutes or until hot and bubbly throughout.
This recipe serves approximately 8.
*Many things can be used for crumbs, such as corn flakes or Chex cereal, bread crumbs, French's fried onions, or potato chips

you can get them both ways. Ive had the shredded potatoes that i use when i make my hashbrown casserole (which is soooo good) Theyre also good with just some ketchup.
The patties end up floppy in the microwave, but if you put them in to the oven, theyre kind of good. (not as good as mcdonalds, so that tells you something)

We can get them in loose shredded form or preformed cakes. We can also get them in little chunks called "Country Style" hash browns.
The cakes I like to deep fry and the shredded ones I brown in a skillet in butter. I don't buy the country style ones.

They're little cakes of potato (or plastic, I can't be sure) that end up soggy in the microwave. Oh, and they have an aftertaste that can only be described as 'chemical'.

They start out as preformed for easy portion control; however, in frying, they lose some of their form, more like you'd get in a restaurant versus what you'd get at McDonald's.
