Salmon Patties or Salmon Croquettes are always a good use for leftover salmon--but, even better, try my Smoked Salmon Spread

1 lb. of low fat cream cheese
1 C. or more of cooked salmon
Liquid smoke
Fresh dill weed
Kosher salt and ground black peppercorns

Let the cream cheese stand at room temp until soft. With an electric mixer, beat the cream cheese until smooth. Gently mix in the salmon, then add the Liquid smoke a few drops at a time until it has the flavor you like. Add the salt and cracked pepper to taste.

Line a round cake pan with Saran Wrap, put cream cheese in pan and smooth with a spatula, cover with Saran. Chill for a least three hours, remove Saran from pan, put plate over pan and flip upside down. Remove pan, and Saran from the cheese mold. Chop the fresh dill and sprinkle over top of mold. Serve with crackers and crispbreads.

In Florida last summer I ate at a restaurant where the salmon was simply baked with a little olive oil and a coating of lemon pepper. Deee-licious!

Martha Stewart, a while back, had a show where an assistant showed a salmon baked in a packet with fresh fennel. Let's see: it was a salmon filet, some slices of fresh orange, and a fennel that was cut up so that there was some of the frond and the bulb part was julienned. Put a layer of the julienne in the center of a piece of parchment paper, then the salmon. Season with salt and pepper, then put the fennel fronds and orange slices on top. Wrap the parchment tightly into a packet and bake at 325 for about 15 minutes.

I sometimes like nut-crusting. Pulverize some nuts (whatever type you think would be good; I tend toward almond, hazlenut, cashew) and mix the meal with equal parts flour; a little cornstarch is also OK, and herbs and seasonings if you wish. You have the option of drying the salmon well and pressing it into the nut mix, or dredging it in flour and then egg and then rolling it in the nuts. Fry in olive oil (or nut oil, or sesame oil) until the coating is a nice color, turn until the other side is similar, serve 'em up.

Salmon Pesto Rolls

This recipe is just pure indulgence! I know it's blasphemy to some, but I like sauteeing the soft smoked salmon before eating it - in butter, of course. Try substituting shrimp or cooked scallops in this recipe.
INGREDIENTS:
1 lb. thinly sliced cold smoked salmon
3 oz. cream cheese, softened
1/4 cup basil pesto
Sliced avocados, brushed with lemon juice
Fresh croissants or tortillas
PREPARATION:
Mix cream cheese and pesto. Use as a sandwich spread with the salmon, avocado, and croissants. Or spread on tortillas, top with other ingredients and roll up to make an easy-to-eat wrap. If you use tiny tortillas or pieces of tortillas, or miniature croissants, this makes a fabulous appetizer too.

Turn them into Salmon Soup. Cook a few small new potatoes in skins when cooked drain add to saucepan half pint of water. half pint of milk. the potatoes and bring up the heat when quite hot but not boiling add the Salmon and some chopped parsley and Spring onion then turn the heat off. Serve when the soup has stopped simmering.

crostada rubbed with garlic and olive oil sliced chilled salmon a little drizzle of your fav asian sauce (i.e. teriyaki or even a little toasted sesame oil!) garnish with pickled ginger slices chopped scallions or a splash of lime sour cream and a sprig of dill use your fav combos to come up with more
