I am considering employing a maid for household cleaning on a part time basis, What is the maximum number of hours and/or money per week she can work/earn before I am elegible to pay national insurance.

The limit is £100 per week.
Note that this limit applies to each week individually and that it is reckoned in tax weeks (starting from 6th April) not calendar weeks.
You will need to obtain her signature on a form P46. If she ticks the box that says it is her main job then the same limit applies for tax. Otherwise you may have to deduct 22%.
