Here are some of my favorites =0)

Chicken Spectacular-
2 cups diced, cooked chicken (I usually use 3-(5oz) cans of chicken, drained)
1- box long grain and wild rice (cook according to directions using chicken broth instead of water, I use can chicken broth)
1- can French Style Green Beans ( I like to add an extra can of green beans)
1- can cream of celery or cream of chicken ( i use cream of celery)
1/2 c. mayonnaise
1/2 c. sliced water chestnuts ( I omit)
1 small diced onion
dash pepper
Combine all ingredients in a baking pan. Bake at 350' for 25 minutes.

HAWAIIAN SPAM CASSEROLE
1 can SPAM, chopped fine
2-16 oz. cans pineapple chunks, reserve juice
3/4 cup sugar
1/3 cup flour
2 cups sharp shredded cheese
Mix together pineapple and SPAM and place in greased 9x13 pan. Mix together sugar, flour, pineapple juice pour over Pineapple/SPAM mixture.Top cheese. Topping: Melt 1 stick butter in frying pan. Add 1 sleeve of Crushed Ritz crackers. Saute until golden brown. Place on top of casserole and Bake at 375 degrees For 30 minutes.

Clare's meatloaf- Maui Island Cookbook
1/2 c. Grape-Nuts cereal
1 pound hamburger
1/4 c. chopped onion
1/2 c. water
1 egg, slightly beaten
1/2 tsp. salt
Mix Grape Nuts and water; let stand for 2-3 minutes. Combine rest of ingredients; mix well. In a greased pan, shape into loaf. Bake one hour at 350'. To get moist loaf, cover with aluminum foil for first 30 minutes and then remove. Ntimid8r's NOTE: This meatloaf was good and VERY moist. The next time I may add Italian Seasoning. I let it bake for 50 minutes.

Cheeseburger Macaroni
1 pound of hamburger
1/4 c. chopped onion (optional)
1/3 c. ketchup
1 1/2 c. water
1 pkg Velveeta Shells and Cheese Dinner
1. Brown hamburger with onion (optional) in large skillet; drain
2. Place hamburger in skillet, stir in 1 1/2 c. water, ketchup, and shell macaroni.
Bring to a boil. Reduce heat to medium low; cover. Simmer 10-12 minutes or until macaroni is tender.
3. Add velveeta cheese sauce; stir until melted.

Hamburger Pie.
1# ground beef
1/2 c. chopped onion
2- 16oz cut green beans, drained
1- 10 3/4 oz condensed tomato soup
1/4c. of water
salt and pepper to taste
3-4 med potatoes, peeled and quartered
1 beaten egg
milk
1/2 c. shredded chedder cheese
Cook hamburger and onion till meat is browned and onion is tender; drain off grease.
Stir in beans, soup, water and season with salt and pepper.
Place mixture in a pan.
Cook potatoes in salted boiling water about 20 min or until tender; drain. mash while hot; stir in egg. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape. Season with salt and pepper.
spread potatoes on top of meat mixture. Sprinkle with cheese.
Bake, uncovered, in a 350 degree oven for 25-30 minutes.
makes 4-6 servings (Can use instant potatoes. Make according to package but omit the butter. Remember: NO BUTTER to the mashed potatoes)

Mini Hotdogs
1 small pkg of lil smokies
American Cheese Slices
2-3 pkgs of crescent rolls
Open the crescent rolls and tear at the perforations. And then cut triangles in half to make 16 triangles per package. Cut each American slice into thirds. Add a slice of cheese on triangle and then place smokie on top and then roll dough to form a little crescent. Bake in oven at 375' for 10 minutes.

Chil Pie
2-3 cans of chili with beans, Frito Corn Chips, Cheddar Cheese, Sour cream (optional)
Heat up chili and pour over a bowl of corn chips and sprinkle with cheese. Dollop of sour cream on top.

Chicken and Mushroom Bake with Rice
6 chicken pieces
1 c. water
1 can cream of mushroom or
cream of celery soup (i prefer cream of mushroom)
1/2 c. rice
2 medium carrots, sliced (I sometimes omit)
celery salt, for seasoning
paprika, for seasoning
1/4 tsp. salt, as needed
Place rice in bottom of a baking dish. Pour 1/2 c. water over rice. Add 1/2 can mushroom soup. Stir to mix with rice. Place chicken pieces, salted and peppered, on top of rice mix. Sprinkle with celery salt. Add carrots. Add remaining 1/2 c. water to mushroom soup in can. Stir until well blended. Pour over chicken, carrots and rice. Sprinkle paprika on top, sometimes I add a little parsley (nice pretty effect). Cover tightly with foil. Bake at 325' for 1 hour or until chicken juices run clear.
You can also cook this without the rice and carrots.
It makes a nice gravy to pour over cooked rice or noodles.

This is quick and easy. A family favorite.
Saturday Chicken
5 servings
10 chicken pieces
(you dont have to use that many chicken pieces. Use how many pieces you want. the rest of the recipe stays the same.)
1 can condensed cream of mushroom (or cream of chicken)
1 cup of cream (dont cheat and use milk; the cream makes a lot of difference)( i have cheated and used milk LOL, but the cream does taste better)
salt, garlic powder, and paprika- to taste
chopped parsley
Season chicken with salt, garlic, and paprika. Next, spread it out, in one layer baking pan. Dilute the soup with the cream; pour it over the chicken, and sprinkle parsley on top.
Bake , uncovered, at 350' for 1 hour or until juices run clear when chicken is pierced with fork.
Makes a delicious gravy. Serve with mashed potatoes or buttered noodles or rice

Broccoli Chicken Casserole
2-3 boiled chicken breasts, diced into small chunks
(just boil the chicken for at least 10-15 minutes or until no longer pink)
Cool and then cut into chunks
1 pkg broccoli
1 can of cream of chicken
Pepperidge Farm Stuffing
1/2 c. mayonnaise
1 1/2 tsp. lemon juice
4 oz pkg mild cheddar cheese
Boiled the broccoli for 5 minutes, then drain.(Boiling the broccoli speeds up the cooking time).
Combine soup, mayonnaise, and lemon juice. Mix with broccoli and diced chicken. Sprinkle with cheese and stuffing mix. Bake at 350' for 35 minutes :0}

Baked Buttermilk Chicken
1 chicken, cut up
3/4 c. flour
1 1/2 tsp. salt
1/4 tsp. pepper
1 1/2 cups buttermilk
1/4 cup butter, melted
1 can cream of chicken soup
Mix flour, salt and pepper. Dip chicken in 1/2 cup buttermilk and roll in flour mixture. Place melted butter in baking pan. Put chicken in pan, skin side down and bake 30 minutes at 425 degrees. Turn and bake 15 minutes. Mix soup and remaining 1 cup of buttermilk and pour over chicken. Bake additional 15 minutes or until golden brown. Makes a delicious gravy.

My family favorite and a staple when money gets tight. This makes enough for 4 people could feed a family of 5 with small children.


Ajah


Olive oil, about 1 tbs or more if you want more
1 onion chopped
1 bell pepper chopped
1-2 tomatoes chopped ( optional)
2 garlic cloves minced or 1/4 tsp garlic powder
6 oz can of tomato paste
Saltand pepper
1 1/2cup water..you need enough to make it like a sauce concistency
4-5 eggs.... I usually add an egg for each person eatting, and an extra if their big eatters.

Put olive oil, onions, bell pepper, tomatoes, garlic, salt and pepper in a skillet or high sidded pan on medium to high heat
( I am a high heat cooker lol) Cook until the onions are clear and the tomatoes are soft.

Add the tomato paste and water to the skillet, stir till combined and cook for about 5 minutes until it is bubbleing. ( you might want to cover since it tends to splatter.

Now uncover, crack open your eggs into the ajah like you are going to make eggs. DO NOT stir. let the eggs cook for about 2-3 minutes depending if you want big pieces of eggs in it or not. Then after 2-3 minutes stir the eggs around and let it cook for another minute or two so that the eggs heat up and cook.

get some bread, I use baguettes, tear a piece off and scoop up the ajah. You can really add anything to this, i usually add potatoes to make it more heart. You can also add eggplant, okra, zuchinni.I just use the veggies that are going to go bad if I don't use them soon.

IT doesn't look to pretty but the taste is the best!!!! it also smells a bit diffrent than it tastes!! Give it a try! i bet once you make this, you will make it again and again. It is incredibly cheap fast and easy!!

We used to make this one at the end of the month before the GI Bill check came in...call it "Wisconsin Chili"
-----------------------------
1-1/2 lb hamburger
1 large onion, diced
1 green pepper [half is OK] diced
garlic bits [or minced up cloves, 2 for sure]
salt & pepper
2 cans tomato soup
2 cans red kidney beans [or 'ranch style' is OK too]
1 can green peas

Brown onions, garlic & peppers together in a little oil, remove/set aside, then brown hamburger. Drain all fat off. Add onion/pepper/garlic, the tomato soups and 1 can of water, stir. Add beans & peas & seasonings...let simmer a while, taste - add more seasonings if wanted...and more water if you want it 'soupier'. Let it simmer longer to blend.

Kids loved the stuff...it wasn't pepper-hot chili, but had all the flavors. Filling, served with soda crackers & perhaps some cheese. Also can put a scoop of cooked rice in each bowl before adding the chili.

What's nice about this one is you can make it stretch by adding more beans & an additional can of tomato soup, plus more seasonings if you like. It just gets better the longer it simmers...and is great for a plain family supper.

We went to a "Big Sky" college and got the occasional pound or two of venison hamburger from our hunter pals, and that made a pot of pure heaven...of course we had to invite the hunters, but still... Bon appetit!

You can make spaghetti with store bought spaghetti sauce and whatever pasta is the cheapest. I guess you can't really call it spaghetti without spaghetti pasta but if you are looking for cheap, you can't be that picky. Or if you see that chicken breast is on sale, you can make some grilled chicken sandwiches. They are delicious and so cheap and simple. There is a recipe that you can find on the campbell's website called chicken and rice casserole and it is also cheap and simple to make. Sometimes all you have to do is look at what you have in your fridge and see what you can come up with. Hope this helps.

5 a day spaghetti carbonara 400g dried spaghetti 30ml good olive oil 25g unsalted butter 115g pancetta or smoked streaky bacon, cut into 1cm (0.5inch) lardins 1 small onion, finely diced Uncloved garlic, crushed to a paste with a little rock salt 85g button mushrooms, sliced 2 whole free-range eggs plus two egg yolks 55g freshly grated Parmesan 16 small broccoli florets 115g frozen petite pois 2 handfuls of spinach 2 tomatoes, seeded and diced salt and ground black pepper 1. Bring a large saucepan of deep water to the boil and add a teaspoon of salt. Grab the spaghetti in one fistful, twist is so it fans out and place vertically into the deep water. As it softens, the spaghetti will collapse into the water. Stir for a couple of minutes to stop the pasta sticking together. 2. Meanwhile, heat the oil and butter into a frying pan until foaming, add the pancetta or bacon and cook until crispy – about 5 minutes. Add the onions, garlic and mushrooms, reduce the heat and cook gently for 7 – 10 minutes, until the onions are soft but not coloured. 3. Meanwhile, beat all the eggs in a bowl big enough to take all the spaghetti, then fold in the grated parmesan cheese and a few grindings of black pepper. 4. Four minutes before the pasta has finished cooking, add the broccoli and peas to the boiling water. When the pasta is cooked, drain it in a large colander and immediately add it to the beaten eggs and cheese, stirring to combine. Fold in the spinach and allow the heat of the pasta to wilt it, then add the bacon and mushroom mix and the tomato. Season to taste and serve immediately.

Meal idea #1:
Sour cream chicken casserole with mashed potatoes
- bake chicken in the oven (in a casserole or baking dish) .. add to chicken 2 cans cream of chicken soup, 1 cup sour cream, 4 cups frozen veggies, 1 tbs paprika
- cover, 350 degrees, bake for an hour
- peel and cut baking potatoes into quarters, boil until fork tender, drain, mash/blend, mix in about 1/4 milk or until desired smoothness.


Serve together for a simple, cheap and yummy meal. The soup/sour cream will serve as a gravy for your mashed potatoes. You can always add to the gravy if you run out, if your family likes it.

Meal Idea # 2
* Simple chili for a chilly day
-2 cans stewed tomatoes (with chili seasonings)
-2 cans tomato sauce
-2 cans tomato soup
-jalapeno pepper (optional)
-chili powder
-garlic
-onion
-3 lbs ground meat (i use beef and veal)
-garlic salt

Brown meat in a skillet with diced onions and crushed garlic. Drain off grease. Set aside. In a crockpot or large pot, add all soups/sauces into pot. Chop up any peppers, add. Add browned meat into sauce mixture. Season with spices to desired taste. For BEST RESULTS, slow-cook this chili. Have it simmering away all day, you can go and do other things while it's cooking.
It tastes even better the next day!
If you like beans (which are very healthy and good for your kids) , then just add 2 cans of whatever beans you like.

Dessert Idea
* My simplest, most requested dessert recipe:

You'll need:
2 pre-made graham cracker choc. pie crusts(baking aisle)
tub cool whip
tub choco. frozen yogurt

Mix cool whip, frozen yogurt.
Pour into pie crusts.
Freeze overnight.

This is a Greek dish and is one of my son's favourites, whenever I make it I freeze a couple of portions for emergencies.

Put 2 litres of lightly salted water on to boil, in the widest saucepan you own (or a very large frying pan with lid).
While it is heating, thoroughly mix the following in a bowl:
1 onion, finely chopped
500g minced beef
1 cup soup/pudding rice *
s & p
finely chopped parsley or, for a change, dill
Take walnut-sized lumps of mixture, squeeze together in your hand, then roll into a ball. Gently lower into the hot water. Repeat with the rest of the mixture. If you like, add sliced carrots. Cover, simmer for c 45'.
My son has his plain. For adults, add avgolemono (beat two egg whites until very soft peaks, add both yolks and juice of 1 or 2 lemons, add ladlefuls of soup and beat, then pour egg mixture into saucepan, tilt pan to make it go all over, and turn off the heat--do not boil or it may curdle).
* My Greek mother-in-law uses much less rice in the mince mixture, but adds rice to the boiling water. This results in small hard meatballs. By using more rice as I do above you get larger, softer meat balls, and enough rice falls off them to thicken the soup.
